Uno de los mensajes principales de las reuniones fue la creciente dimensión global del sector oleícola. En las últimas seis décadas, tanto la producción como el consumo mundial de aceite de oliva se han triplicado y cerca del 45% del consumo ya se produce fuera de los países tradicionalmente productores, mientras que el cultivo del olivo se ha extendido a los cinco continentes. 
En este contexto, el director ejecutivo del COI, Jaime Lillo, subrayó que el aceite de oliva ha dejado de ser un producto exclusivamente mediterráneo para convertirse en un alimento de alcance mundial, lo que exige reforzar la cooperación internacional y mantener estándares de calidad cada vez más sólidos.
