Rencontre avec Jean Mane, président du directoire et arrière-petit-fils du fondateur, qui incarne les engagements de l’entreprise familiale.

"Le premier engagement, nous le devons au site sur lequel nous sommes implantés. Quand nous vivons et travaillons dans un cadre naturel aussi unique que le nôtre, il s’agit de le préserver. Mais au-delà de cette implication, nous tenons à entretenir des liens étroits avec les communes et les communautés alentours. Nous sommes une entreprise familiale aussi dans la mesure où nous employons de nombreuses familles et ce, sur plusieurs générations."

Cette responsabilité n’est-elle pas trop lourde à porter pour un seul homme ? "J’assume ce rôle de figure de proue, de licorne, tant il me semble important de mener nos activités dans le respect du milieu dans lequel nous vivons, mais également nos familles et nos clients. Mais, MANE n’est pas un one Mane show. Le chef d’entreprise se doit certes de montrer le chemin. En revanche, il ne devient un leader d’action, et non d’opinion, qu’à condition d’être bien entouré."

 

A meeting with Jean Mane, Chairman of the Board and great-grandson of the founder, who personifies the commitments of the family business.
"We owe our first commitment to the site where we are located. When we live and work in a natural setting as unique as ours, we have to preserve it. But beyond this commitment, we are keen to maintain close links with the surrounding municipalities and communities. We are also a family business in that we employ many families over several generations."
Isn't this responsibility too much for one man to bear? "I take on this role as a figurehead, as a unicorn, as I feel it is so important to conduct our activities with respect for the environment in which we live, but also our families and our customers. But MANE is not a one-Mane show. The company manager must certainly show the way. However, he becomes a leader of action, not opinion, only if he is well surrounded."

The Cut caught up with Massé to talk perfume halos, sushi leaves, and photogenic hills in the South of France.

The separation of isomers is one of the key bottlenecks for
natural product analysis. In particular, flavonoids and their
glycosides– a ubiquitous and important class of plant phenolic
compounds composed of over 8000 members – pose a
specific challenge due to their enormous isomeric variability in many natural products, resulting in difficulties in structural
identification. In collaboration with the University of Singapore, MANE SEA applied a 2D-LC method in conjunction with HRMS and MS/MS for the resolution of some selected flavonoid isomers. In this study, 42 common flavonoid aglycones and glycosides were selected and resolved.

Mushrooms may not be as high in protein as meat (although they do contain 1-3% protein by weight, depending on the species), but they are rich in B vitamins, high in fiber and, perhaps more important, so rich in meaty flavors that you hardly miss meat.

Why do mushrooms taste so meaty? The short answer is that, like meat, they are rich in the umami flavor compounds that impart a savory or brothy taste. Research by Korean food scientists published last year in the journal Foods found that mushrooms vary in the amount of umami they contain. Porcini and shiitake contain a high percentage of umami, while the ornamental clusters of Shimeji mushrooms that you sometimes see in gourmet stores contain none at all. But if you want to make mushrooms mimic meat, the way you cook them can make a big difference...

The move taps into the “clear labeling” theme, which sees consumers expressing more interest in products that highlight where its ingredients were sourced from without declarable additives. 

Consumers are looking for clean and clear labels, so our customers are demanding more natural aromatic ingredients to flavor their finished products,” Ghislaine Gilliers, strategic marketing manager of flavors EMEA at MANE tells FoodIngredientsFirst. “The natural aromatic ingredients are part of MANE heritage. We’ve been honing extraction techniques from natural ingredients since 1871. We had many aromatic ingredients in our portfolio,” she continues.“The most popular ones for the sweet applications are our vanilla extracts and our botanical and fruit infusions. For the savory applications, our concentrated vegetable juices and our new spice extracts with profiles true to freshly ground spices are the bestsellers.”

MANE’s raw materials expertise is rooted in partnerships with global agricultural producers who supply their local knowledge of the ideal ingredients. The flavor specialist has set up fair remuneration to contribute toward the sustainable development of their businesses. The company has vertically integrated strategic supply chains for vanilla, mint, tea, botanicals, coffee, spices, fruits, vegetables, seafood and meat.

Mathieu Nardin, born and bred in Grasse! "Tanneron hills covered with mimosa were my playground. The fragrance industry is a family passion: my grandparents are fragrant flowers producers and several members of my close family are perfumers. My very first olfactory memories have been enriched by the fields of rose, jasmine and verbena. My grandmother let me participate in the harvests. Extraction workshops, at very short distance from the fields, are an incredible olfactory journey. They exhale strong, humid and warm smells, a blend of ingredients from years of activities. The whole process was a fascinating ceremony and a pure joy for me. It always seemed obvious to me that I would be a perfumer. In 2018, I met Samantha Mane. This meeting has been instrumental to my decision to join MANE group. It meant so much to me that MANE is  both a French and Family owned company."

"Comme disait mon grand-père, « l’investissement d’aujourd’hui est l’emploi de demain et le chiffre d’affaires d’après-demain ». Nous sommes confrontés à un manque d’espace pour étendre nos activités d’innovation et de recherche. En se projetant à 20 ou 25 ans, la seule solution pour privilégier le maintien de l’emploi local et l’attractivité de nos sites dans le sud de la France, est de construire quelque chose de grand. Sur les 14 hectares du site de la Sarrée, nous avons la maîtrise foncière pour cette réalisation qui réunira la plupart des activités d’innovation et de recherche et des procédés pilotes industriels de nos divisions arômes et parfums du Bar-sur-Loup. Il y aura des ateliers et laboratoires d’extraction et d’extrusion, les laboratoires d’encapsulation, des lignes pilotes permettant de petites séries en boissons, produits salés, laitiers et alternatifs végétaux, des laboratoires dédiés aux technologies de demain, des plateformes de tests et recherche pour nos nouveaux procédés industriels ou encore un plateau de synergie entrepreneuriale à destination de start-up et micro-entreprises innovantes. Nous visons une inauguration en 2023 ."

"We are facing a lack of space to expand our innovation and research activities. Looking 20 or 25 years ahead, the only solution to encourage the maintenance of local employment and the attractiveness of our sites in the South of France is to build something big. On the 14 hectares of the Sarrée site, we have the land control for this project which will bring together most of the innovation and research activities and industrial pilot processes of our flavour and fragrance divisions in Bar-sur-Loup. There will be extraction and extrusion workshops and laboratories, encapsulation laboratories, pilot lines for small production runs in beverages, savoury, dairy and vegetable alternatives, laboratories dedicated to the technologies of tomorrow, test and research platforms for our new industrial processes and a platform for entrepreneurial synergy for start-ups and innovative micro-companies. We are aiming for an inauguration in 2023."

Tout est désormais à portée de main et de nez. Ainsi, la maison de composition MANE dispose d'une technique permettant d'extraire au gaz supercritique le principe odorant de multiples produits « frais », comme des fruits ou des légumes, mais aussi « manufacturés », comme des pâtisseries. Cette méthode, qui fut initialement utilisée par l'industrie alimentaire pour retirer la caféine des grains de café et la théine des feuilles de thé, permet de développer diverses matières premières que l'on nomme Jungle Essence™. Le pain d'épices en est le parfait exemple puisque les parfumeurs devaient traditionnellement reconstituer l'odeur par un accord. Aujourd'hui, pour en obtenir directement un ingrédient, un immense pain d'épices est préparé par un pâtissier, puis réduit en miettes afin d'être passé à l'extracteur. Le résultat obtenu, baptisé Gingerbread Jungle Essence, se retrouve notamment dans le Spice Must Flow d'Etat Libre d'Orange. Du côté des produits frais, on peut citer l'extrait de cassis qui signe le dernier Si Eau de parfum intense d'Armani ou, plus étonnant, celui de poivron vert qui apportera son amertume et sa vivacité végétale à un lancement encore confidentiel et prévu pour la rentrée.

"What is interesting in perfumery, and what I prefer most, is building new accords, new building blocks, to use unusual combinations or overdoses where you have an idea of a certain tension between raw materials that could produce an effect but it’s not yet clear in your mind, so you are trying to approach it and build on it. I like to find raw materials and unusual combinations which have not been used very often, and it’s still possible to do that in perfumery..." To obtain an objective and quantified response on the raw materials have the most impact on our environmental resources, MANE has developed a test based on the principles of green chemistry.

We broke down the twelve principals of green chemistry to establish a quantifiable evaluation grid, which did not exist before,” Mathilde Voisin, Ingredient Marketing Manager at the company, explains. Once the 2500 ingredients in the perfumer’s palette are analysed, each receives a score between 0 and 100. The higher the score, the less impact the ingredient has on the planet. “No ingredient can score 100,” Mathilde Voisin points out. “As soon as a product has been transformed, it’s at a cost to the planet. The aim is therefore to improve the manufacturing processes of our ingredients to get closer to the maximum score.”

Gold Myrrh Absolute, the new fragrance by Carolina Herrera, is a rare take on myrrh and a beautiful, if rather unconventional (you’ll want to chew on all that dry woodiness) gourmand perfume. Fragrantica spoke with its creators, Véronique Nyberg and Alex Lee of MANE : "First and foremost, Gold Myrrh Absolute is constructed as a Middle Eastern fragrance, and it needed to have a solid and coherent identity. Most of our tests (and we did a lot of tests) focused on perfecting the fragrance, just like a diamond. It had to be polished and shaped to make it more opulent and appealing, and it had to be aligned with the bottle and the name that had been chosen."

MANE created their School of Perfumery in 1996, with the objective to impart the knowledge and know-how of this craft in an accompanied environment, in line with the historic values of the company. To date, just over half of the group’s perfumers have come from the MANE School of Perfumery.

When asked to describe the most challenging part of the training, former students gave a variety of answers. And as MANE considers its graduates to be olfactory artists, Lisa Montes summed it up well by saying “The MANE School of Perfumery allowed me to complete my goal of becoming a perfumer, and to give me the keys to create perfumes on my own, in this creative environment full of freedom.”

Fifth variation for Sí, Sí Eau de parfum Intense is a sophisticated reinterpretation of the classic launched in 2013. This chypre oriental scent with notes of blackcurrant, rose and patchouli was composed by Julie Massé  (MANE), nose of the previous Sí fragrances.

Sí Eau de parfum Intense highlights the emblematic top note of blackcurrant nectar, with in its heart the Isparta rose combined with the velvety and liquorous davana. Finally, base notes of patchouli, benzoin resin and Madagascar vanilla provide an enveloping sensuality.
