Relancer l'industrie en France par l'innovation. La feuille de route arrêtée par le gouvernement trouve un écho favorable dans le pays de Grasse. Le N°5 mondial des arômes et parfums, le groupe MANE, annonce son intention d'investir une trentaine de millions d'euros dans un nouveau centre d'innovation sur son site industriel de La Sarrée, au Bar-sur-Loup. "Nous allons déposer le dossier de permis de construire avant la fin de l'année pour la construction d‘un bâtiment de 10.000m2" précise Jean Mane, président du groupe familial. Doté d'équipements ultra-modernes, le nouveau centre, qui sera le plus important du groupe dans le monde, pourra accueillir plus d'une centaine de personnes. 

Boosting industry in France through innovation. The roadmap drawn up by the government is finding a favourable echo in the Grasse area. The world N°5 in aromas and perfumes, the MANE group, announces its intention to invest around thirty million euros in a new innovation centre on its industrial site at La Sarrée, in Bar-sur-Loup. "We are going to submit the building permit application before the end of the year for the construction of a 10,000m2 building" says Jean Mane, chairman of the family group. Equipped with ultra-modern facilities, the new centre, which will be the group's largest in the world, will be able to accommodate more than a hundred people.

MANE is launching a new range of organic marinades compatible with the new EU organic regulation 2018/848. The announcement comes at a time where organic products have a growing market positioning in Europe.

The organic meat market is becoming more and more mature,” says Fanny Dézert, business development manager EMEA at MANE. “Consumers that are now used to buying organic meat products are now searching for diversity in the organic meat section, and that is where our organic compliant marinades can play their part."

We are building this range little by little and want to offer organic compliant marinades to our European customers that will not require reformulation,” states Olivier Katona, head of MANE's meat center of excellence in Noisiel.  “We are also putting in place various processes to be able to integrate more organic materials in our marinades’ formulas, keeping in mind the end consumer’s need for great flavor,” he adds.

Sensory Scientist, talk about the utility of graph databases. You can actually store historical data in a way that allows you to search it... just like google!
This talk presents a step-by-step use-case of how to implement a graph database to extract novel insights from diverse historical sensory and consumer data. Among the types of data we include in a single database are: Acceptance, demographics, descriptive analysis, difference testing including both Tetrad and Triangle tests, emotion CATA, ingredient and flavor information, Just-About-Right, preference, and temporal data. We demonstrate how, using Neo4j - a freely available open-source graph database platform - sensory scientists can perform efficient and intuitive artificial intelligence (AI) powered queries on the totality of their historical data. We then explain how these queries would be difficult to perform using more traditional relational database technology.

Conditionnée par une biodiversité que l’homme a déjà beaucoup explorée, la palette des ingrédients naturels peut sembler figée. Comme nous le révèle Serge Majoullier, parfumeur chez MANE, c’est en réalité tout l’inverse.

"Chaque fois que l’on introduit une nouvelle odeur, cela déclenche chez les parfumeurs une réflexion extraordinaire : on se dit qu’on pourrait l’employer dans tel projet, l’associer à tel autre pour créer un accord inédit… Tout nouvel ingrédient invite à imaginer quelque chose de différent. Chez MANE nous développons deux ou trois nouveaux ingrédients dans les bonnes années. Mais une matière première qui apporte une tonalité inédite, si on en a une tous les trois ou quatre ans, c’est bien ! Et une nouvelle méthode d’extraction, c’est tous les dix ans !

Slowly but surely, we are developing a taste for plant-based proteins, and we are learning to appreciate the specific nuances of their flavour, but in order to be an acceptable stand-in for our favourite food items, plant-based products need to deliver a taste experience that is on-par with meat or dairy.

We have screened a variety of affordable protein sources with a strong nutritional profile, ranging from plants to animal protein alternatives. MANE has developed a wide range of affordable nutritional concepts including spirulina-based beverages, baked goods and snacks as well as soy- and pea-based meat alternatives, gravies, soups and baked goods. We are also still conducting concept development and testing on underutilized African crops. To improve the nutritional situation of at-risk population groups while also making protein sources affordable for them, we need to work on making these affordable proteins more of an attractive option."

The potential of fungi for taste modulation through the controlled fermentation of green coffee beans is just beginning to be explored. Based on the results of this study, MANE has shown that fungal fermentation can induce an advantageous modification of the taste and aroma compounds of green robusta coffee beans. Although further and larger scale research is warranted, fungal fermentation has great potential as a method of improving the quality of robusta coffees in the future.
