The Metro has a nice article about culinary experiences in Belize.  It focuses mostly on Cayo, where we've had 5 restaurants opening in a little over a month's time.  Pop's is mentioned, as is the Guava Limb, and the Marie Sharp's Tourist Center, where the author participated in a cooking class.  Chaa Creek got a great recommendation too.
