Die alten Ägypter haben der Nachwelt viele erstaunliche Bauwerke hinterlassen. Der neueste Fund von Archäologen im Land der Pharaonen ist nicht etwa eine weitere Pyramide, sondern die wohl älteste Brauerei der Welt.


Sie bauten die berühmten Pyramiden, erfanden das Papier und orientierten sich am Sonnenkalender - die alten Ägypten waren ihrer Zeit in Vielem voraus. Jetzt wollen amerikanische und ägyptische Archäologen im Land der Pharaonen die wohl älteste Bier-Fabrik der Welt gefunden haben. Bereits Tausende Jahre vor Christus soll dort das Bier bereits in Massen geflossen sein.

Il va faire beau ce week-end, les barbecues vont chauffer. Des experts recommandent de privilégier les viandes marinées... à la bière.


Un groupe de scientifiques européens a constaté que la viande marinée à la bière réduisait les hydrocarbures aromatiques polycycliques (HAP), une susbtance qui se forme lors de la cuisson des viandes sur un barbecue. Certains de ces HAP ont des propriétés cancérigènes. L’étude, réalisée par des chercheurs de l’université de Porto, a été publiée dans le «Journal of Agricultural and Food Chemistry».

Les experts ont testé la cuisson au barbecue sur plusieurs steaks de porc: sans marinade, marinés à la bière blonde, à la pils sans alcool et à la bière noire. Pour la viande qui n’avait pas subi de marinade, les proportions de HAP excédaient les moyennes admises.

While beer connoisseurs have mixed and heated opinions about the trend of ever-more hoppy beers, some researchers just can’t get enough of the bitter buds.

Their keen interest stems from the potentially untapped medicinal properties of the flowers. Traditional medicine has long used hops for everything from sedation to combatting infections. And researchers have noted that the plant’s chemical constituents appear to have anti-inflammatory, antibacterial, and anti-cancer activities. Yet chemists are still working out all the chemicals responsible for the potentially therapeutic effects and how to use them to brew up new medicines.

Now, with two new studies, researchers report that they’re getting closer to pinning down and optimizing hop-based medicines.

In one study, appearing in the Journal of Natural Products, a team of Italian researchers identified three previously unknown chemicals from Cascade hops—which are used in many American brews, but perhaps notably as a finishing hop in Sierra Nevada’s Pale Ale. One of the chemicals has clear anti-inflammatory properties.
