Sparvoli, 37, isn’t selling anything illegal. She’s selling truffles — specifically black Italian summer truffles and black winter truffles from Australia (a burgeoning growing region for the fungi given its opposite seasons) — to Pierre Schutz, the executive chef at the Mark Restaurant by Jean-Georges.
Francesca Sparvoli wheels around an insulated bag filled with about $6,000 worth of black truffles. She sells the pricey fungi to top chefs around the city and is on call 24/7.
Two years ago, Sparvoli, a native of the Marche region of Italy and a former journalist, moved to New York City with her then-boyfriend, now-husband, businessman Marco Bassi, to break into the NYC truffle trade. She and Bassi had always wanted to move to the city after visiting several times to run marathons, and the truffle business is in her blood — her family has been dealing truffles for three generations, and Marche is a major region for the fancy fungi.

The Borough Market is beneath the railway and the viaduct; between the river Thames and Borough High Street.
According to historians, the market existed since 1014 and has been in its current location since the 13th century. Borough is the oldest fruit and vegetable market in London.
About 130 traders operate in the market, ranging from cheese makers from France and Italy, to food artisans from Buenos Aires and the Grenadines, to a Galician purveyor of high-end food products. In addition to the traders, the market is home to several cafes, restaurants and wine bars.
The market employs food-quality experts to ensure the tastiest food and to qualify the products’ authenticity. Most of the vendors display posters of where their farms are located and how they tend to their products and livestock.
It’s best to visit the market hungry as vendors generously offer free samples. For navigational purposes, the market is divided into three main areas: Jubilee, Middle Market and Green Market.

Tartufaia Truffles (Jubilee Market) — Marike was on a mission to find truffle honey, a treat she and her husband have been addicted to since a friend introduced them to this delicacy. Tartufaia is the location for the incredible truffle honey and oils from Acqulagna in the Marche region of Italy.

Taken home, Klaus began taking an interest in wine and especially truffles, becoming an expert, making known the truffles of Le Marche in the programs of Bavarian and German TV.

But the passion for the Marche brought Klaus to turn into a tour operator sui generis.

Together with Federica from Jesi they organize groups of abut fifty north-european tourists for visits of three or four days in the central Marche.

Their guests are excited about the Marche and even though he has never made promotion initiatives, with the simple word of mouth, he has obtained bookings for its tours until the end of 2015! [...]

The stunningly scenic mountain village of Montefortino in the Sibillini Mountains Central Italy, held its 16th annual Festival of Real Truffles, 'Festival del Tartufo Vero dei Monti Sibillini', often amidst thunder and lightening. While the stormy weather was not ideal it was symbolic as the Romans believed that truffles were created when the god Jove hit an oak tree with a thunderbolt. Doctor Fioravanti the president of the truffle association, A.T.T., spoke about the cultural history of truffles prized from Greek civilization onwards and associated with myths concerning their powers, such as being an aphrodisiac or the food of witches. In the past the 'real' truffle needed to be distinguished from legends. Today the 'real' truffle needs to be protected from the counterfeit. [...]

This is how food regulation begins in some cases- in this case Chinese genetically modifying truffles, running them through Romania as "Romanian Truffles" and bypassing the European Union. One day there will be Codex standard developed and most likely the National Health Federation Codex delegation will sit in on this. Just as now even though most agree that follow up formula is bad and not necessary, it is undergoing the Codex standard process

In the name of Italia Tartufi there is enclosed the whole story of a family all dedicated to the searching for truffles. The origins tell of grandfather Tarquinio who, moved by a passion for the pursuit of the delicious tuber, rized every morning with his dog Ufo to get in the woods of oaks and poplars.
