Ingredients, serves 4-6
- 2 medium potatoes, peeled and sliced to 1/2 cm thick (1/4 inch)
- 2 French shallots, thinly sliced
- 4 tablespoons of extra-virgin olive oil
- 6 organic, free-range eggs (because we can’t support battery eggs any longer)
- 2 tablespoons of mil
- salt and pepper for seasoning
- mixed herbs
- bread for serving
