Il violino dei poveri non fa parte della tradizione musicale antica della nostra regione, sembra infatti che sia stato introdotto, come altri strumenti, verso gli anni ‘50 del secolo scorso. Ancora una volta è probabile che sia il sud Italia, con la sua ricca tradizione, a offrire spunti rielaborati poi dai gruppi folkloristici locali.

Dalle ricerche effettuate risulta che i primi nelle Marche ad utilizzare questo “violino”, chiamato poi segone o segò, furono dei gruppi caratteristici di San Costanzo e Fano situati nella provincia di Pesaro-Urbino. Successivamente l’idea venne elaborata e arricchita con l’introduzione di campanelli da Mario Amici, voce e memoria popolare di Monte San Vito (An), un comune situato nella Valle Esina. The Salumificio di Genga is located in the heart of the Marches, inserted in the Park Gola Rossa, rare beautiful landscape that includes the presence of an extraordinary natural wonder what are the Frasassi. E 'already a reality since the early 70s, was born in a peasant, where breeding and processing products were one. Still this union has been maintained in the conviction that it is the best foundation for a quality product. Over the years it has been firm willingness to jealously preserve tradition and quality, seeking origins in the recipes in order to preserve the aromas and flavors of the past.
The pig is the guiding thread of the inland Marches gastronomy and its history is tied to that of the share-cropping families; it was reared with acorns and mash and the butchering would take place during the winter when the food produced by the other agricultural activities was becoming scarce and the low temperatures permitted the processing and the preservation of the pork meats.The Salumificio di Genga produces different ranges of cured meats that satisfy wide ranging tastes throughout Italy, from cured meats traditionally made in the Marche area to traditional Italian cured meats and hams.

The use of olive oil to prepare sweets such as biscuits, ring-shaped cakes and jam tarts has always been much diffused in the Marche region as well as in other Central Italy regions.
For this reason we thought to propose to our clients also a Christmas speciality. The traditional Christmas cake from Milan has been reinvented with the help of a local pastry master chef. Panett’Olio is made with Olio (olive oil) del Carmine instead of butter as the traditional recipe would suggest. This is a tasty and easily-digestible product. Olive oil gives it extraordinary softness and lightness. In order to obtain an outstanding product choice of premium ingredients is fundamental. Thus, we only use fresh egg yolks and leaven.
The production cycle takes three days: leavening, cooking and cooling processes are monitored through a continuous checking of temperatures, times and humidity.

As a toddler, Marco Massaccesi played in his father’s atelier, a workshop built on Marco’s grandparents’ land near beautiful Ascoli Piceno in the Marche region of Italy. When Marco was twelve years old, his father began to teach him how to work with leather. These lessons did not include modern assembly machines or other contemporary ways of quick manufacturing. Marco practiced and mastered the art of leatherworking using centuries’ old techniques. The world was a different place then, Marco recalls. The traces of an important pastoral civilization, which practiced transhumance, the seasonal migration of livestock, can still be found in the Sibillini Mountains. In recent years, however, the presence of shepherds in these mountain areas has significantly diminished. Guardians of techniques and knowledge, they were the ones who began making a local sheep’s cheese (pecorino) from raw milk. According to tradition, the curd was semi-cooked and the cheeses were aged naturally, turned every two or three days to encourage the formation of the rind. They can be eaten after just a couple of months, though they are best when aged at least 100 days.
Seasonality - Cheesemaking from spring, after the weaning of lambs, until October
The Presidium unites small-scale producers with cheesemaking facilities and is working to set up an association that can differentiate and identify the Sibillini Mountains pecorino, which is produced according to a strict production protocol. The milk must be produced by the cheesemakers and processed raw and artisanally and the cheese must age in a natural environment.
