Roggio del Filare is a selection of Rosso Piceno Superiore that has been prized with "5 grappoli" by the AIS Guide "Duemilavini" ed. 2012. As clearly indicated by the Denomination production specifications, this wine is mainly made with Montepulciano and Sangiovese grapes, then refined in French oak barriques. This wine has a luminous and concentrated colour, a wide and elegant aroma which recalls sour black cherries and the small red fruits. Also its taste is wide, soft, varied with a successful balance of fruit and wood.

Colour: Brilliant, gleaming ruby red with a hint of garnet.
Bouquet: Intense, elegant nose, with fruit-driven scents and a hint of preserve, blackberry, cherry, all blending perfectly into the wood's spicy undertones.

Colle Vecchio is one of the most representative labels of Tenuta Cocci Grifoni.

It is made from purely vinified Pecorino grapes, a native variety rediscovered at the beginning of the 80's. 

The wine has been prized with "5 grappoli" by the AIS Guide "Duemilavini".

The antique grape variety of Pecorino was slowly abandoned over time, due to its reduced productivity.

Guido Cocci Grifoni brought it back to life, revealing to enthusiasts and the public the history of this excellence of authentic vines, which has progressively spread across the land thanks to its peculiar features.

Colle Vecchio is straw yellow in colour with greenish reflections; its aroma is spicy and rich in alcohol, acacia blossom and jasmine.

Geographical zone of production: municipality of Offida, "Colle Vecchio" vineyard, locality San Basso.
Terrain: deep, medium-consistency and tendentially clayey soil, north-easterly exposed hilly area
Altitude: between 180 and 210 m. a.s.l.
Training system: espalier system, spurred cordon type.
Grape variety: Pecorino in purity
Grape harvest: manual with grape selection, from the first ten days of September, the moment in which grape harvest begins is decided according to maturation curves based on 3 parameters (sugar, total acidity, ph).
Vinification: in white, temperature control at 16°C, static must cleaning and inoculation of selected yeasts.
Refining: the wine is first stored in wine vessels for 4 - 5 months, then - after cold bottling - in bottles in dark storage areas for 2-4 months.
Maturation: in stainless steel tanks for at least 5 months
Serving temperature: 12° - 14° C.
Shelf life: 5 - 6 years

It was a sunday morning, my mother was coming to visit us in Macerata. Let me check if there is any “sagra” going on.. i don’t know, maybe some food festival, religious feast or something.. We find this one in Ripatransone, in the province of Ascoli Piceno. A few times I’ve heard the name of this little town facing the Sibillini mountains on one side and the sea on the other side. Never though have I known it was home to Ascanio Condivi, first official biographer of Michelangelo.

Not only this, Ripatransone is one lovely town, with a vibrant Renaissance vibe, a little Florence on the Marche hills. Perfect for a day trip, especially when it’s too hot in the valley and you feel like you need to enjoy the view on the mountains while drinking some good wine.

This is a classic dish from Marche. To stand a chance of making them, you really need a very large olive like those found around Ascoli Piceno; the key is stuffing the olives plentifully before frying them. In Marche, they are pretty ubiquitous, popping up as appetizers in the fanciest of restaurants right through to your local pizzeria. And very delicious they are too.

This recipe is courtesy of Paola from Azienda Agricola Fiorano and her mum.

Ingredients for 4

Big fat olives still on the stone – (classically Ascolane olives) about 30

Pork – 200g/7oz

Turkey breast – 200g/7oz

Beef – 200g/7oz

Mortadella – 100g/3.5oz

Parmesan – 80g/2.8oz

Eggs – 4

White wine – A glass

Nutmeg – to taste

Salt – to taste

Pepper – to taste

Bread crumbs – as required

Flour – as requested

Extra virgin olive oil – as required

During the snow storm of the century in Central Italy, I can't think of a better way to warm up than devouring a plate of rich & creamy pasta with a good bottle of red after a day of shoveling the drive. Perfect for a cold winter's night, lasagna bianco, 'white lasagna' is made with porcini mushrooms, sausages & bechamel, a local classic in northern Le Marche. A refined take on the usual red sauce classic, that will have your mouthwatering for more after the first bite.

Extra Delicious Tip: Make sure to have your pasta sheets large enough to hang over the edges creating golden crispy edges!

Lasagna Bianco -White Lasagna

serves 6
1 recipe of egg pasta or 4 sheets of fresh pasta
1 recipe of béchamel sauce
8 oz. sausage meat (250 gr)
2 cloves garlic, whole, peeled
2 big handfuls (about 2 cups) chopped mushrooms (we use porcini, chanertelle and other local wild mushrooms)
small handful of chopped parsley
3 Tablespoons of olive oil
salt & pepper to taste...

Vineyards - Growing area: the Marche, in the province of Ascoli Piceno. Location: the vineyards are sited nearby Acquaviva Picena town and are cultivated by using the biological techniques. Age: varies from 8 to 30 years. Soils: derived from alluvially-deposited seabed sediment, predominantly Plio-Pleistocene and Miocene, with predominance of sand and rock sloping down to the coast. Aspect and elevation: on sunny hills at 200-350 m. Grapes: 60% Montepulciano, 40% Sangiovese. Training system: guyot and double guyot. Vineyard density: 2.500-4.000 vines per hectare. Yield: 100 q of grapes. Harvest: hand-picked. Vinification: fermentation at controlled temperature, maceration on the skins in steel tanks with daily pumpovers. Maturation: partly in French oak barrels for 4 months Appearance: ruby red colour tending to garnet at the rim. Bouquet: soft fruit, well-ripened cherry melding impressively into subtler impressions of violet. Long and intense. Palate: dry and sapid, its supple tannins and the alcoholic warmth create an admirable balance. Cellaring - Its obvious youthful qualities best suit it to be enjoyed during its first year, but it give considerable pleasure even after 3-4 years. Serving suggestions - Tomato sauce and ragout pasta, very good with bolognese lasagne and macaroni timbale. Perfect with porchetta (roast whole pig), shank of pork and veal stew. Serving temperature - 16/18° C. Alcohol: 12,5% vol.

Very few wine producing nations bring as much panache to their tastings as do the Italians.

The Italian Trade Commission recently sponsored its ninth annual tasting in Vancouver..
The Italians have sponsored tastings in Toronto and Montreal for 19 years; those cities are the major Canadian markets for Italian wine. In the last decade, Italy has made more of an effort in Western Canada as well, trying to win away consumers that buy most of their wine from Australia, California, South America and British Columbia.
Perhaps half of the 37 wineries at the Vancouver tasting have no wines in the market. Those wineries were looking for agents and listings in the BC Liquor Distribution Branch.
The LDB currently lists 460 Italian products, including multiple sizes and fortified products. Sales of Italian wines in British Columbia in the 12 months ended September 30 totalled $59.2 million, up five per cent from the previous 12 months.
It is a sliver of the market. The LDB’s total sales in the same 12 months were just under $3 billion.
But the Italian sliver is worth exploring, to discover the excellent “new world” styling of the wines. In the past decade or two, Italian producers have really raised the bar. And they are doing it with varietals that grow primarily in Italy. The taste profile of Italian wines is a refreshing change to palates that may have become jaded with Merlot and Shiraz.
Their edge comes from using varietals not even grown in much of the rest of the wine world. When you add those novel flavours to modern wine making, you get crisp, fresh whites without a trace of oxidation and you get juicy and appealing reds without the hard tannins of yesteryear.
Italy still offers the familiar brands that have been on the market for years and years, but made to improved quality standards. One example is a 45-year-old brand, Fazi Battaglia Verdicchio Classico ($14.99), a crisp, refreshing white still being sold in the green hourglass shaped bottle. Many of us bought it initially because the bottles, like the Chianti in the “fiasco” served well as candle holder.
Fazi Battaglia is an example of why the Italians are competitive. Verdicchio is an ancient variety that is planted widely in central Italy but hardly anywhere else. The LDB’s tasting notes speak of flavours of baked apple, hazelnut and ripe melon. The wine is light but it has its own personality...
...The bottom line is that the Italians, by adopting cutting edge winemaking techniques but not jettisoning their traditional varietals, are producing wines that are unique.

CASTAGNOLE CON FARINA DI CASTAGNE

Ingredienti

125 g. di farina di castagne,
100 g. di latte,
85 g.di farina bianca,
75 g.di zucchero semolato,
g. uvetta 50 secca di corinto o sultanina,
10 g. di lievito di birra fresco,
1 uovo,
olio di arachidi,
zucchero a velo per decorare.

Setacciare le due farine già mischiate. In una ciotola sciogliere il lievito con g 50 di latte tiepido. Aggiungere al lievito una parte della farina il resto del latte...
