Omelette, called frittata in Italian is the best way to appreciate the black truffles.

Prepare the black truffles. If you buy fresh black truffles you need to clean them before.
Cook the frittata. Beat the eggs with salt, pepper (if you like) and grated truffles (experts suggest to cut the Black Truffles into small sticks).
Put the olive oil in a non-stick frying pan and let it get hot. Pour in the egg mixture, lower the heat and, after 1-2 minutes when the eggs start to set, turn the frittata over.
Don't cook frittata very much; it must be soft.
