Servair : Effectivement, certains aliments sont interdits en raison de leur fragilité. C'est le cas par exemple du poisson sauvage, des coquillages (à l'exception de la noix de Saint-Jacques), des oeufs servis avec leur coquille (les oeufs pochés ne posent pas de problème), les viandes et poissons crus, les herbes fraiches... Nous avons une exception concernant les sushis servis en petite quantité et à la dernière minute par le Chef japonais Servair.
