Francine Segan's fresh pasta chapter in Pasta Modern features most well-known homemade pasta shapes: ravioli, gnocchi, and free form pasta sheets are interspersed with a few long, twisted noodle recipes. The frascarelli, however, are totally different. Segan calls this the "world's easiest pasta." Indeed, you'll need little more than your fingers to make the pasta, and it needs nothing other than a bit of cheese, oil, and (maybe) meat to finish. Cooked in just a quart of water, these tiny "nuggets" of semolina, water, and egg have the same tender toothsome texture as German spaetzle, but are served like polenta.

The Frascarelli were very common in the Marche especially in the southern part. Today, like all the dishes almost disappeared, the dish decrees the success of those few restaurants that dare to propose them. Poor dish the most rural areas, the Frascarelli were the dish of choice of breastfeeding women

2 medium shallots, peeled and thinly sliced.Break apart "rounds".
2 tablespoons vermouth
2 tablespoons sour cream
Olive oil, for brushing
4 eggs, medium or large size, depending on size of tomatoes (see above), at room temperature
¼ cup mixture of chopped fresh flat-leaf parsley and sage
¼ cup freshly grated Parmesan

This is a recipe from our friend Alessandra’s grandmother Maria. On Christmas day she will be up at 5am to start cooking for her 20 or so guests. The beauty of the crespelle, which is essentially a pancake, is that you can fill it with anything. Maria, ever the crowd pleaser, makes three different versions: one for the kids, one for the adults and one for cousin Giulia and her ‘infernal diet’. The only trouble with eating at nonna Maria’s is that if you finish your plate, it means you want more – and within an instant your plate is refilled. If you don’t finish your plate (or the second or third) you are admonished for not liking her food.

Crespelle dry ingredients

Ingredients for 8 crespelle (2 each)

⅓ cup soy sauce

3.5 tablespoons sesame oil or canola oil
2 tablespoons honey + 1 tablespoon sugar
1 dash fish sauce
3 tablespoons vinegar + a squeeze of lime if you have it

1 piece fresh grated ginger (1-2 tablespoons)
