Tessa's Favourite Traditional Scottish Shortbread

INGREDIENTS
2 cups salted butter at room temperature
1 cup caster sugar
3 cups plain flour
1 cup rice flour

METHOD
1. Preheat oven to 300F/150C
2. Cream butter and sugar
3. Add sifted flours in 4 portions
4. Mix well after each addition


[Shaping style 1]:
5. Press mixture into 2 shortbread molds
6. Prick top of shortbread with a fork to prevent cookie from cracking during cooking
7. Mark top of shortbread into segments with a knife
8. Cook for 45-60 minutes or until edge turns a slight golden colour


[Shaping style 2]:
5. Turn onto a floured board
6. Pat or roll to 1/4 - 1/2 inch thickness
7. Cut into desired shapes with a cookie cutter
8. Place onto cookie trays lined with baking paper
9. Cook for 20 minutes or until edges are slightly golden


[Shaping style 3]:
5. Place round tablespoonfuls of mixture onto a cookie tray lined with baking paper
6. Press top of rounds with a fork to flatten into cookie shapes
7. Dust tops of cookies with caster sugar
8. Bake for 20 minutes or until edges are slightly golden

INGREDIENTS
1 cup unsalted butter
3 tablespoons icing sugar, sifted
1 egg yolk
1 tablespoon cooking brandy
1/2 cup finely chopped toasted almonds
2 1/2 cups plain flour
1 teaspoon baking powder
extra sifted icing sugar to sprinkle over the shortbread cookies


METHOD

1. Melt butter until bubbles subside and sediment is golden brown: do not burn
2. Pour melted butter into mixing bowl: leave sediment in pan
3. When butter has solidified, add first quantity of icing sugar and beat on electric mixer until light and fluffy.
4. Add egg yolk and brandy and beat well
5. Remove bowl from mixer and stir in almonds
6. Sift flour and baking powder twice and mix lightly into butter mixture
7. Shape mixture into a long roll approximately 2.5-3 inches wide
8. Cut into 2 inch segments and shape each one into crescents by curling edges inward
9. Place cookies on trays lined with baking paper
10. Cook in a moderate oven for 15-20 minutes until lightly coloured
11. Leave to cool on tray for 10 minutes
12. Sift icing suger over waxed paper and lift warm cookies onto this
13. Sift some more icing sugar on the top of the cookies.
14. When cool place in a container
15. Seal and store for 2 days before using to improve the flavour.

From the legend of the Claddagh ring to 'drowning the Shamrock' on St. Patrick's Day Irish Culture and Customs is a collection of articles and stories that covers a wide variety of topics drawn from Ireland's rich history and heritage.


INGREDIENTS (for 20-30 cookies depending on circumference and thickness)

2 cups salted butter (at room temperature)

1 cup brown sugar

4 cups plain sifted flour


METHOD

1. Preheat oven to 300 F or 150 C.
2. Cream butter until it is nicely whipped and fluffy

3. Gradually beat in the sugar

4. Add flour (1 cup at a time)

5. Mix well after each addition

6. Turn out onto a floured board and roll into 1/4 or 1/2 inch thick (depending on what you want to do)

7. Use floured cookie cutters or the floured rim of a standard glass to cut out shapes

8. (Optional) Decorate/sprinkle with large sugar crystals (like coffee sugar)

9. Place on a cookie tray lined with baking paper10. Bake in oven for 20-30 minutes or until golden

11. Take out of oven and allow to cool on trays (or cookies break) before moving.

How to cook Burrebrede, a classic recipe from Scotland...

 

INGREDIENTS
100g caster sugar
1 tsp ground cinnamon
1/4 tsp ground green cardamom
1/4 tsp ground ginger
1/4 tsp ground allspice
1/2 tsp salt (discard if using salted butter)
375g unbleached plain flour
225g butter, softened

METHOD

1. Preheat oven to 350F or 180C

2. Combine the sugar, spices and salt in a bowl
3. Divide the mixture into two equal parts and set one aside.
4. Tip the other half in a large bowl, combine with the flour then mix-in the butter with your fingers until the mixture becomes grainy.
5. Turn the dough into the base of a 20cm square pan and press evenly to cover the entire surface.
6. Using a knife, but into rectangles of about 3cm by 5cm.
7. Prick the surface with the tines of a fork (to produce the classic pattern and to prevent the shortbread from curling whilst cooking).
8. Sprinkle the reserved sugar mixture over the top. Brush the sugar topping into all the holes and cracks, then transfer to an oven.
9. Bake for about 25 minutes, or until the shortbreads are firm and only slightly coloured at the edges.
10. Allow to cool completely in the pan then break into pieces along the cuts you made and serve.

I am not entirely sure what the ingredient "besan" is but I am keen to try this recipe out. Might need to do some online research.

I will be replacing the ghee with melted butter and not including any green cardamom (personal taste issue) but I will definitely be following the remainder of this recipe.

The Hindi language was not a barrier as there were English subtitles at the bottom of the video.

This recipe looks great!

Celtic Shortbread

This is a site that collects traditional recipes from cook books printed as long ago as the 1500s.

A traditional recipe for shortbread - contributed by Michelle de Tomasso

INGREDIENTS

1 cup butter -- softened

3/4 cup dark brown sugar

2 cups flour


METHOD
1. Preheat the oven to 300° F.
2. Cream the butter in the bowl of an electric mixer.
3. Add sugar and beat until light and fluffy.
4. Add the flour, 1/3 cup at a time, until a soft dough is formed. (Do not overbeat!)
5. Bake for 25 to 30 minutes, or until rounds are just firm to the touch.

Yield: 16 shortbread

Easy butter cookies recipe with simple ingredients: butter, sugar, egg, milk and flour. Yields buttery, crumbly, and sweet cookies.


INGREDIENTS
10 oz. butter
1 tablespoon Pam cooking spray (for baking)


1 egg yolk


3 oz. + 1 tablespoon icing sugar


1/4 teaspoon salt


11 oz. all-purpose flour


4 oz. corn starch


2 tablespoons full cream milk/whole milk


1/2 teaspoon vanilla extract


METHOD
1. Cream butter with spray, sugar, egg yolk, salt and vanilla extract until fluffy.
2. Add in milk and mix well.
3. Fold in multi-purpose flour and corn starch.
4. Mix until dough becomes soft and does not stick to hands.
5. Preheat oven to 350F
6. Line two baking sheets with parchment paper.
7. Roll the dough to 1/4 inch thick.
8. Cut into rounds or whatever shapes you wish using cookie cutters.
9. Place the cookies on the prepared baking sheets and place in the refrigerator for about 15 minutes. This will firm up the dough so the cookies will maintain their shape when baked.
10. Bake for 15 minutes or until cookies are lightly golden. Cool on rack.
