S’mores Cake 


Milk Crumbs
3/4 cup milk powder
1/2 cup flour
3 tablespoons sugar
2 tablespoons corn flour
3/4 teaspoon sea salt flakes
80g butter, melted
12 tablespoons Ovaltine mix
80g white chocolate, melted


Malt-fudge sauce
1 1/3 cups Ovaltine mix
120g dark chocolate (I used Lindt 70%)
1 teaspoon molasses
Pinch of sea salt flakes
1/2 cup cream
1/2 cup glucose / corn syrup
1/4 cup sugar

Chocolate cake
60g dark chocolate
1 3/4 cups flour
3/4 cup dutch-process cocoa
2 teaspoons baking powder
1 teaspoon sea salt flakes
170g butter, room temperature
2 1/4 cups sugar
3 tablespoons glucose / corn syrup
3 eggs
3/4 cup buttermilk
1/3 cup vegetable oil
1 teaspoon vanilla extract


Malt soak
1/2 cup milk
3 tablespoons Ovaltine mix


Assembly
2x packets mini marshmallows (sorry didn’t make note of the grams!)
Brûlée torch

Ingredients:

3 Cups Black Beans, Drained & Rinsed Well

1/2 Cup Flour (I used whole wheat flour)

1/2 Cup Agave Syrup

1/2 Teaspoon Cinnamon

4 Tablespoons Coconut Oil, Melted

1 Teaspoon Coconut Oil, Not Melted (for topping)

1 Teaspoon Salt

1 Teaspoon Vanilla

7-8 Medjool Dates, Pitted

1/2 Cup Cocoa Powder

1 Teaspoon Flax Seeds

1/2 Cup Nuts, Chopped (I used pecans)

1/4 Cup Chocolate Chips

3 Tablespoons Nut Butter of Choice

 

Instructions:

Preheat oven to 375F.  Spray an 8×8 baking pan with cooking spray. Set aside.

 

Put black beans, pitted dates, agave syrup, flax seeds, vanilla, cinnamon, salt and melted coconut oil to a food processor or blender. Process/blend until very smooth. Transfer mixture to a large bowl and add cocoa powder and flour.  Mix until well-combined, and then pour into your baking pan. Set aside.

 

Add 1 teaspoon coconut oil and 3 tablespoons peanut butter to a small, microwave-safe dish, and warm for about 20 seconds, or until melted. Mix together and then drizzle over brownie mixture and swirl together.

 

Top with chocolate chips and chopped nuts and bake for 35 minutes, or until a toothpick comes out clean. Allow to cook for at least 30 minutes before slicing.

1¾ cups flour

½ tsp cinnamon

¾ cup butter
4 squares unsweetened chocolate (such as Baker’s chocolate)
2 cups sugar
3 eggs
1 tsp vanilla
1 cup flour
Salted Caramel Sauce
2 cups sugar
12 Tbsp butter
1 cup heavy cream
1 Tbsp fleur de sel

Pudding:
¼ cup sifted cornstarch
2 cups whole milk
1 cup heavy cream

6 ounces unsweetened chocolate, finely chopped, such as Scharffen Berger 99% or Callebaut or Valrhona unsweetened
¼ teaspoon salt
1½ teaspoons vanilla extract

 

Cake:
3 cups all-purpose flour
2 cups sugar
⅓ cup sifted black cocoa
⅓ cup sifted natural cocoa (or ⅔ cup sifted natural cocoa if not using the black cocoa)
1 tablespoon instant espresso powder, such as Medaglia d’Oro
2 teaspoons baking soda
1 teaspoon salt
2 cups warm water
⅔ cup flavorless vegetable oil, such as canola or sunflower
2 tablespoons apple cider vinegar or distilled white vinegar
1 tablespoon vanilla extract”

1/2 cup (120 ml) unsweetened pumpkin purée (either homemade or canned)
2 Tbsp (30 ml) unsweetened plain or vanilla almond, soy or hemp milk

1/4 cup (60 ml) coconut sugar
2 Tbsp (30 ml) lucuma powder (or sub with 1 Tbsp/15 ml carob powder)
1/8 tsp (.5 ml) pure stevia powder or 1/4 tsp (1 ml) plain or vanilla pure stevia liquid
pinch fine sea salt
For the Brownie:
8 ounces (225 g) pumpkin purée (either homemade or canned), about 1 cup/240 ml
2 Tbsp (30 ml) coconut nectar
1/2 cup (40 g) coconut sugar
1/4 cup (60 ml) extra virgin coconut oil, preferably organic, softened
1/4 cup (60 ml) natural smooth almond butter (unsweetened)
1 Tbsp (15 ml) pure vanilla extract
1/4 tsp (1 ml) pure stevia powder or 1/2 tsp (2.5 ml) plain or vanilla pure stevia liquid
1 Tbsp (30 ml) finely ground flax seeds

1/4-1/3 cup (60-80 ml) unsweetened plain or vanilla almond, soy, or hemp milk, if needed
1 cup (135 g) Ricki’s All Purpose Gluten-Free Flour mix
2/3 cup (60 g) unsweetened cocoa powder
1/4 tsp (1 ml) baking powder
1/4 tsp (1 ml) baking soda
