Pasta Sauce: Borlotti Bean & Tomato with Sage | Food & Wine | Scoop.it

Traditionally this is a summer sauce made when the borlotti beans & tomatoes are fresh but it's so heavy we prefer it in the fall and winter using our jarred tomatoes & frozen beans. Locals add pork ribs to the sauce adding extra flavor and resulting in a side dish of stewed meat!

Ingredients - serves 4+

2-3 handfuls of borlotti beans (preferably fresh) dried1 large jar or 2lbs/1 kilo of tomatoes, crushed, passed (seeded & skinned) or pureed1 carrot1 celery stick1 onion5-6 pieces of bone (whatever type you like) I normally use pork ribs that the butcher cuts in halfolive oilsalt & pepper1 clove of garlicsagesprig of rosemary if you likepasta of your choiceextra virgin olive oil for finishing the dishDirections

The wines from these regions are nice: Softer than the more intense and tannic Sangiovese wines that predominate from the regions west of here. We tried two; one a 100% Montepulciano wine, one a blend.

2009 Fratelli Barba Pregio Del Colle Morino Montepulciano d’Abruzzo DOC [...]2008 Saladini Pilastri Rosso Piceno DOC – This La Marche wine, a blend of 50% Montepulciano  and 50% Aglianico, is sold in the U.S. with four different labels. Regardless of the picture on the front, this is a bolder, jammier experience than the Barba, lush with blueberries and strawberries, plus touches of chocolate and green tea. A- / $18

This article discuses how the United Nations is becoming an advocate for family farms, or micro farms that families utilize and share to feed their community, or sell for a profit. Family farms eradicate hunger, and create a sustainable and lasting way for a community to grow food. Large scale farms use chemicals and pesticides that can endanger the environment and the health of the people, while family farms do not, and produce mostly organic foods. The writer of the article introduced the idea of establishing micro farms in communities in Africa, This would provide a way for the community to have a lasting food source, and they could also sell their produce to local markets for a profit. African tribes and communities would no longer have to rely on foreign aid, and they would become increasingly more independent. 

This article links to Unit Five, Agricultural and Rural Land Use, because it proposes the idea of using family farms and rural land to solve for poverty in communities across the globe.

Next time you pour a glass of wine, raise a toast to the 30-milion-year-old viruses that have contributed to the genetic make-up of modern grapes.

 

A team of UQ-led plant scientists has discovered that the Pinot Noir grape variety owes a significant part of its genetic heritage to ancient plant viruses.

 

In a study published in Nature Communications, Dr Andrew Geering and colleagues have mapped the presence of 30-million-year-old viruses in Pinot Noir DNA. Viruses are usually a curse to farmers because of the damage they cause to crops, but this study also suggests they play a vital evolutionary role.

 

Dr Geering, a plant pathologist at the UQ's Queensland Alliance for Agriculture and Food Innovation, said most flowering plant species, even the most primitive ones, contain sequence signatures of viruses in their genetic material.

 

"Animals can move to avoid threats but because plants are anchored to the ground they are obliged to adapt to environmental pressures, such as those brought about by drought or grazing, using novel strategies.

 

"Plants cope with such threats by acquiring new biochemical pathways or growth habits."

 

"Pulling new genetic material from the environment, such as from viruses that infect the plant, means evolution can be sped up considerably."

 

Much like humans, plants are regularly exposed to harmful chemicals or radiation, which can cause damaging and heritable mutations to their genes which, if left unrepaired, could be lethal to their descendants.

 

"Fortunately, there are special mechanisms to repair these mutations. It's during this repair procedure that foreign DNA such as that originating from viruses can be inserted into the plant's own genetic code, much like using putty to fill a crack in the wall."

 

"When this happens, the viral DNA can become 'domesticated' if it provides a selective advantage to the plant."
