INGREDIENTS: 

2 boneless skinless chicken breasts, chopped into strips or chunks + salt and pepper to taste
2 cups chopped bell peppers (I used a combination of red, yellow, and green)
20 ounces crushed pineapple (or pineapple chunks), undrained
2 tablespoons soy sauce
2 tablespoons honey
1 teaspoon ground ginger
2 teaspoons minced garlic
¼ teaspoon garlic salt
½ teaspoon onion salt
⅛ teaspoon chili powder
2 tablespoons cornstarch + 2 tablespoons cold water
optional: rice, sesame seeds, sliced green onions, fresh chopped pineapple

Christmas time, the season of nibbles. I love nibbles. I will, at any given opportunity, rock out the buffet table and go nibble-crazy rather than prepare a sit-down meal. Why? Because then you will be far more likely to have something for everyone, you can cater to veggies without having to do one thing just for them, and, well, I love eating teeny tiny food! These scrummy, slightly spicy roasted quinoa bites should make an appearance in any buffet/canapé event because to be quite frank, they are the bomb.

Spicy Roasted Quinoa Bites – Ingredients 

1/2 cup of quinoa (plus 1 cup of water for cooking)1/2 cup ready-made polenta2 red peppers1 medium red chilli1 cup of cheddar cheese1 egg1/4 cup of tomato puréea few dashes of salt and pepperbreadcrumbs if necessarySalsa of your choice, to serve

1/2 tsp hot sauce

1/2 tsp dried oregano a pinch of garlic powder (or 1 minced garlic clove) 1 tsp agave nectar
