There were many thing that were super yummy at the Minnesota State Fair, but the two things I didn’t expect to find were Roti and Doubles. Yet lo and behold, I stumbled into Harry Singh’s Caribbean Restaurant booth in “The Food Building”.

In case anyone hasn’t noticed on my travel blog, I love seafood … specifically, the fish and chips (also called FnC) variety. Working in Atlantic Canada has allowed me to seriously overindulge in my fried food affair, much to the detriment of my gut.

While I love the fish & chips in the Maritimes, I wouldn't really waste any extra time or effort to head over the Cap Pele for seafood ... it's rather bland and boring!
