Fluffy Yoghurt Scones Recipe. The scones rise up nice and fluffy due to the yoghurt. The golden raisins lend a touch of sweetness.


Made these scones- used spelt flour and they didn't rise enough. Very tasty though- added chopped cranberries too. 6/10

Rhubarb Pie from Ruta

Rhubarb pie:
preheat oven to 425
1 9 inch pie shell

3 cups rhubarb ( usually end up with a tiny bit more) cut in into 1/2 inch pieces
2 eggs
1/4 cup butter, melted.
1 cup sugar
3 tbsp flour
In separate bowl from rhubarb whisk 2 eggs add the melted butter
Sift in another bowl, the sugar and the flour and then add to the egg mixture. Add all of that to the rhubarb and stir it all about. Put in pie shell.

For topping:
1/2 cup flour
1/4 cup brown sugar
1/4 tsp cinnamon
1/4 cup cold butter
Mix dry ingredients then add the butter working with a pastry buddy until its kind of coarse crumbs. I usually just use my hands and its a little more globby than crumby, but it all works out in the oven. Sprinkle over the pie.
Put pie in oven at 425 for 15 minutes, then turn heat down to 350 for 40 minutes.
