Topics include:

The diversity of plant chemical compounds used in medical settings

The interplay between metabolic pathways and mineral elements

Design principles that govern how metabolic pathways have arisen

How the diversity of secondary metabolites may have arisen

Efforts to change photosynthesis in rice from the C3 to the more efficient C4 pathway,

It's sometimes easy to overlook the obvious, which is that plants are amazing chemists - these articles do a good job of getting that point across, and are an exciting collection to share with your students.
