Bright and tangy homemade frozen yogurt swirled with a mouth-puckering tart cherry jam for a combination that is utter perfection. I daresay I've cracked the code to homemade frozen yogurt that's creamy, not icy, made from whole milk yogurt, sweetened to perfection and swirled (or drizzled!) with a tart cherry jam. Not every Thanksgiving dish has to be larger-than-life-sized. Sometimes it's the little things that make the biggest impression. Take sweet potato casserole, for instance. Wouldn't it be better if, instead of an oversized casserole dish full of sweet slop, every person at your table got their own petite package of crispy and caramelized sweet potato, each nest topped with their own roasty toasty melty marshmallow? Sounds pretty awesome to me. The spiralizer makes easy work of this otherwise tedious dish, no peeling, boiling or mashing involved. Even with a 15-20 minute soak (our trick to getting crispy sweet potatoes) this dish easily comes together in under an hour. To make these bite-sized casseroles, simply toss spiralized sweet potato with an egg and flour mixture, and arrange in muffin cups. Rich and chewy double chocolate sugar cookies spiked with bourbon and rolled in bourbon-infused raw sugar for a satisfying crunchy finish. The result is a brownie-like chocolate cookie with a beautifully crinkly top that'll knock your socks off! At this point, I've baked bourbon into bundt cakes and brownies, bourbon balls and caramel sauce... it's about time it made its way into some cookies. This is one of those recipes that exceeded my expectations on the first try. I wanted a soft, chewy chocolate sugar cookie, and boy did these deliver. And the beautifully crackly top? Well, that was an unexpected bonus. I incorporated the bourbon in the dough itself as well as in the bourbon-infused sugar in which the cookies are rolled. My favorite soft amaretti cookies get a bright and fruity twist with the addition of freeze-dried raspberries. Almond and raspberry make for a perfect pairing, these luscious little cookies are proof of that. The punch of vibrant raspberry flavor comes from ground up freeze-dried raspberries, which offer an intense flavor without adding any extra moisture. In follow up to last week's soft amaretti cookie recipe, I thought I'd offer up this unique variation: raspberry amaretti! It's basically the exact same recipe with the addition of ground up freeze-dried raspberries. But that one little change makes a huge difference. I honestly can't decide if I love the originals better or this bright and fruity variation (I'll have one of each, please... don't make me decide). In fact, these turned out so well I'm tempted to try more variations. Blueberry, maybe? Or what about a chocolate version? Maybe I'll work on that one for next year!
