I feel bad for not sharing this recipe with y’all before now. It is amazing. I first saw Giada make these on the Food Network back when we lived right outside of Charleston, SC and I had access to things like prosciutto and a Whole Foods. *sigh* I kept making this recipe when we moved to Missersippi (*I know how to spell Mississippi. Shut up. I’m trying to help you.) but I used bacon instead. And let’s get real. Bacon is NEVER a bad substitute for anything.

You may need to cover and simmer to make sure the vegetables are soft all the way through. This is WAAAAAAAY better the day after if you can stand to not eat it the same day you cook it. If not, make it early and let it sit in the fridge, warm it up and serve it over rice. If you want to feel superior, serve it over brown rice.

 

Freezes beautifully. (I don’t really know that, but name that movie!)

Y’all, I am so sorry I’ve been a blogging slacker lately. I’ve been so busy trying to keep up with my kids, polish my manuscript to have it ready for publication, working on a couple of freelance assignments I’m REALLY excited about and just, you know, living and whatnot that I totally dropped the blog ball. (Go ahead and laugh. You know I am.)

 

In the midst of all this, I was packing my entire family. Zeb and I dropped the kids off at my mom’s for the weekend so I could come to my first EVER writer’s conference in my favorite place on the planet, Auburn. And I don’t mean that in a stupid football fan girl kind of way.

Because of my little time travel dilemma I have become QUITE the fan of online shopping. I have been on a quest for the last two years to find the perfect pillow.

 

I wake up every single morning with my neck hurting and recently have started having migraines. Every pillow I’ve bought has FAILED ME. Too big, too small, too hot. They all sucked.

 

Number of pillows purchased in my house over the last two years: 487,982-ish

 

Every time I go to Civilization, I look for pillows. Every store I go in, I swing through home decor. I have feather pillows, hypoallergenic pillows, memory foam pillows– all of them still leave me going to the chiropractor at least once a week, often twice. I take ibuprofen like they are vitamins.
