Apparently, the Marche region of the Sibillini Mountains was the first place where truffles were cultivated in Italy, beginning in 1932 and then blossoming in the 1950s and 1960s thanks to Mannozzi Torini, a regional inspector belonging to the Corpo Forestrale dello Stato, according to La Tartuficoltura nelle Marche (ASSAM 2012). The province of Pesaro Urbino counts 22000 licensed truffle hunters on a population of 363092 (one every 16 inhabitants) and almost every one own a dog. Acqualagna counts 200 truffle hunters on a population of 4500 (1/22) and can harvest every year a number that stands at an average of 600 quintals of truffles of all kinds that represents the 2/3 of the entire Italian production.

We visited in autumn last year, and because of the preceding wet summer, truffles were plentiful. Acqualagna, along with Alba, are two Italian towns associated with truffles. As a highly appreciated delicacy truffles play important role in haute cuisine. Known from ancient times they have been eaten in a variety of traditional dishes throughout Europe. Due to its high price and restricted hunting regulations only selected restaurants serves dishes with truffles all year round. The industry of Acqualagna – a small town where I stayed in – has been focused on truffles for almost 50 years. They made a huge effort to switch their production towards truffles and it is impressive today how many shops and restaurants sell high quality truffles. And what is even more impressive the conditions of Marche hills are so good they allow to grow all species of truffles! While I wish to visit Marche in December, when white truffles are collected, I still had amazing time there: I got invited for a truffle hunt! [...]

The stunningly scenic mountain village of Montefortino in the Sibillini Mountains Central Italy, held its 16th annual Festival of Real Truffles, 'Festival del Tartufo Vero dei Monti Sibillini', often amidst thunder and lightening. While the stormy weather was not ideal it was symbolic as the Romans believed that truffles were created when the god Jove hit an oak tree with a thunderbolt. Doctor Fioravanti the president of the truffle association, A.T.T., spoke about the cultural history of truffles prized from Greek civilization onwards and associated with myths concerning their powers, such as being an aphrodisiac or the food of witches. In the past the 'real' truffle needed to be distinguished from legends. Today the 'real' truffle needs to be protected from the counterfeit. [...]

This is how food regulation begins in some cases- in this case Chinese genetically modifying truffles, running them through Romania as "Romanian Truffles" and bypassing the European Union. One day there will be Codex standard developed and most likely the National Health Federation Codex delegation will sit in on this. Just as now even though most agree that follow up formula is bad and not necessary, it is undergoing the Codex standard process

For Americans, this time of year means turkeys and pumpkin pies. For Italians, and owners of the world's most expensive restaurants, it means white truffles. From late October until Christmas, the ten-week season is one of the shortest — and most profitable — on the culinary calendar. But this year, a hot, dry summer has left many patches barren, and some are calling it one of the scarcest truffle seasons ever. Even still, restaurants don't seem to be having too much trouble tracking truffles down this year. How so? We tracked truffles from Italy to restaurant tables in the U.S. to find out.

Of course, it behooves people in the truffle business to play up the low-stock, high-quality angle since it drives prices astronomically high. “The season hasn’t started as well as we would have liked,” Andrea Pirotti, the mayor of Acqualagna, says. Acqualagna, located in the Le Marche region of Italy on the eastern slope of the Apennines, is considered one of the most important white truffle regions in the world. It’s not as famous as Alba to the north, where people flock for its much followed white truffle auctions in October. But when Alba postponed the auctions with little warning this autumn, Acqualagna and its young mayor were forced into the unlikely role of telling the world what to expect from the 2012 crop. "We've seen prices consistently at 3,000 Euros and higher per kilo," Pirotti says. (That's $3,817 for about 2.2 pounds; truffle geeks can follow the near-daily fluctuations in Italian truffle export prices here.)

This kind of pricing naturally lends itself to all sorts of marketing gimmicks. Oscar Farinetti, the founder of Eataly, held a press conference at the megamart's Rome location in October to declare the quality of this year's limited crop exceptional. When, last weekend, a one-kilo truffle was found near Acqualagna, Farinetti offered to give it to President Obama to celebrate his reelection. The catch, of course, is that Obama has to pick it up himself at Eataly's New York location.

But how does export price actually affect American restaurants? The price of a decent white truffle — which depends not only on weight, but also on shape, hue, and age — has topped $3,400 per pound this year, says Huntington Beach, California, importer Roberto Saracino. (That's about twice as much as the export prices.) Restaurant owners are understandably secretive about where they buy truffles and how much they pay for them, but when Saracino and I spoke a few weeks ago he told me he'd shipped about one pound of fresh white truffles to Sirio Ristorante at the Aria Resort & Casino in Las Vegas, Sinatra at the Wynn, and Le Cirque at the Bellagio, where a truffle tasting menu goes for $395 before tip, tax, and wine.

In fact, I knew about that truffle sale before Saracino told me. In the hills above Roccafluvione, a tiny Italian town in the Le Marche region with a single functioning traffic light, 6,000 miles from the Las Vegas Strip, I met Bruno, a shaggy Lagotto Romagnolo — a breed favored by truffle hunters. Bruno had unearthed the biggest white truffle in the batch that was later shipped to Saracino, and then on to his Las Vegas clients. Bruno’s find was a lovely plum-sized specimen, a speckled hazelnut shade (the ideal hue). The dog dug it up on a Monday. It was brushed clean, weighed, and packaged on a Tuesday morning and then shipped by Bruno’s owner, Silvio Trivelli, to Saracino. It arrived in California less than 48 hours after being dug up from the woods of Roccafluvione.

Six o’clock in the morning in the hills around Mercatello sul Metauro, in the heart of the Marche region of Italy, and still pitch dark. By the light of a couple of dim torches, we tripped over tree roots and tore through brambles, pursuing two curly-haired Larghetto Romagna dogs, Brico and Ulisse.
Our guide Massimo – farmer, cook, restaurateur and tartufaio or truffle hunter – strode on, surefooted and fiercely focused, directing the dogs in an eerie language of clicks and whistles.

Sparvoli, 37, isn’t selling anything illegal. She’s selling truffles — specifically black Italian summer truffles and black winter truffles from Australia (a burgeoning growing region for the fungi given its opposite seasons) — to Pierre Schutz, the executive chef at the Mark Restaurant by Jean-Georges.
Francesca Sparvoli wheels around an insulated bag filled with about $6,000 worth of black truffles. She sells the pricey fungi to top chefs around the city and is on call 24/7.
Two years ago, Sparvoli, a native of the Marche region of Italy and a former journalist, moved to New York City with her then-boyfriend, now-husband, businessman Marco Bassi, to break into the NYC truffle trade. She and Bassi had always wanted to move to the city after visiting several times to run marathons, and the truffle business is in her blood — her family has been dealing truffles for three generations, and Marche is a major region for the fancy fungi.

Sant'Angelo in Vado is famous for the The Domus of the Myth, the greatest archeological discovery of this last fifty years in Central Italy. It is a Domus of 1000 meters squares with many rooms every one decorated with an elaborate series of two coloured mosaics and polychrome mosaics and everyone is different from the other one. 
Every mosaic is well preserved and the high quality and the wonderful decorations show a very refined, cultured commission and very specialized workers in mosaic.
