In fact, I was relieved to learn this simple solution for pairing wines and truffles grown in the same area (as close to each other as possible) was advocated at a presentation of a unique guidebook to truffles. The book, 'Piceno, Terra di Tartufi' was inaugurated by the Unione Montana dei Sibillini in the mountain village of Comunanza, in the Marche region of the Central Apennines, Italy. Unfortunately it is available only in Italian. It includes scientific and technical facts, but unlike other books -- for the first time -- there are recipes beyond the ordinary, neither to be found on the internet nor in other books, and finally wine solutions as well! Considering both wines and truffles alter in taste depending on the content of the soil where they grow, it would seem to make sense to choose wines that come from where the truffle is produced. Central Italy is the main area for black truffles in Italy. Indeed it is claimed that the Marche region was the first place of truffle cultivation in Italy, beginning in 1932, and then blossoming in the 1950s and 1960s due to Mannozzi Torini, a regional inspector belonging to the Corpo Forestrale dello Stato.

White truffle season has arrived and chefs’ urge to add the delicacy to their menu creations is undeniable. TravelsinTaste spoke with some of the country’s top chefs about this luxurious treat and how they are using it this season.  First up, Fabio Trabocchi, a native of the Le Marche region of Italy, one of the few habitats of the delicacy explained,  “When we put a truffle-specific dish on the menu, the best approach is to keep it simple, adding it to fresh pasta, risotto, and eggs. It’s one of my favorite ingredients. They are such rare delicacies and have such a sublime flavor.” Trabocchi has two restaurants in the Washington D.C. area, Fiola and Casa Luca.  In both chef Trabocchi will offer bianchetto (“little white”) truffles during the entire month of January at market cost to customers. In Acqualagna, the saying goes that “it’s truffles year round”. The prized black winter truffle and the black summer truffle, the ‘little white’ spring truffle and especially, the white fall truffle, give this little inland Marche town its unique distinguishing feature: it is THE place for truffles. Food is at once history, tradition and art. Each territory expresses these in its products, each having unique characteristics and high quality. Acqualagna lies on favored land where for centuries it has been known for its prized tuber production that leaves here to grace the tables in homes and restaurants, to regale the senses of epicures everywhere. The landscape is pure enchantment: the Apennines on one side and the rock of the Furlo on the other, cut by the Metauro River, a rocky embrace softened by lush green oak, hornbeam and maple woods. The 47th National White Truffle Fair of Acqualagna in northern Le Marche, it will open October 28th and will be kept in these specific dates in November 1-2-3-4-10-11.
Acqualagna Its long tradition of research, production and sale of truffles makes its market the ideal meeting place for Italian and international buyers. Acqualagna must be considered the international Truffles Capital because of its numbers. Acqualagna, with about 600 tons of truffles of all kinds, collects two thirds of national production of the precious tuber.
