Creating a menu is a process that involves many factors, from seasonality to cost to customer demand. Learn what executive chef Brian Young from Tavern on the Green has to say about creating menus for different functions.
Jessica's insight:

My thoughts:

For the management and financial aspects of a restaurant, there are certain rules that need to be followed so the processes are rather straightforward.  However, creating a menu is where one's creative side and talent comes out.  Personally, I have grown up with many different kinds of food and have learned to cook to foods of multiple cultures.  Therefore, deciding how I should integrate my own beliefs into one menu has always been a challanging task.  But when the time comes when I know what kind of food I really want to cook, I think that this article will come in handy because it explains some basic and some not so basic concepts of menu making.

Hiring a kitchen staff from scratch is perhaps the most important task for a new chef and restaurateur. Find out what you need to know before hiring a kitchen staff that will be the foundation of your restaurant.
Jessica's insight:

My thoughts:

This article brings up a lot of good points for employers and people searching for a job in the kitchen.  There are many shows with secret cameras that focus on failing restaurants and most of the time, it is the staff.  I think that many restaurant owners need to see how they hire employees and reevalutate their staff in order to become more successful.

Want to re-create the authentic tastes of the Hong Kong street at home? Sign up for a course with Martha Sherpa--she doesn't fool around.

My thoughts:

Martha Sherpa's cooking school is one that I realistically see myself attending.  Originally, I wanted to go to a school with large fancy kitchens and famous intsructers.  However, after reading this review, I have changed my mind.  It shows how a school that focuses on the food rather than the politics and cameras is where real learning takes place.  Additionally, this is where I can learn about a culture that I have a personal connection with.

Restaurant Health and Safety Codes

Restaurant Health and Safety Codes | Joining the Restaurant Business | Scoop.it
Every new restaurant owner needs to know and understand their local restaurant health and safety codes for a successful and safe restaurant opening.

My thoughts:

For me, this is the most important part of owning a restaurant.  The food may be delicious, but it is harming the customers and employees if the business does not follow sanitary and safety guidelines.  Since food can be so easily contaminated, it is important that all employees, from chefs to busboys, take care of their health and hygiene.  In addition to keeping people safe, following health codes makes a restaurant more appealing.  If people see that it is clean and organized, they are more likely to eat and return there; especially if the food is delicious as well.

Restaurants, startups, and America's first pizza museum.

My thoughts:

Although not all of these articles are about the food industry, it's interesting to the approaches businesses take to make themselves known.  Some of the restaurants featured classic and traditional food from countries halfway across the world and others used science and a modern theme to make their restaurant special.  Just reading sentence long summaries already helps to get ideas for my perfect restaurant.

Gourmet's Guide to the World's Best Cooking Schools: Food + Cooking : gourmet.com

Gourmet's Guide to the World's Best Cooking Schools: Food + Cooking : gourmet.com | Joining the Restaurant Business | Scoop.it

We’ve traveled across the globe and come back with great tips, fabulous recipes, and a collection of truly amazing places to visit.

My thoughts:

Of all the websites on culinary schools I have visited, I love this one the most.  The way a school is categorized is done in a way that really speaks for a person.  It's like asking yourself, "What kind of person am I? Do I want adventure or luxury?"  Instead of focusing on where a school is located or what kind of programs are available, this site focuses on what kind of school reflects the student's personality.  Additionally, for those who have not considered a culinary institute that focuses on a specific kind of cuisine or healthy foods, this website opens that door as well.

How to Choose Commercial Bar Stools & Chairs

How to Choose Commercial Bar Stools & Chairs | Joining the Restaurant Business | Scoop.it

The commercial bar stools and chairs chosen for a business set the overall tone for the decor and comfort level of an establishment. Bar stools and chairs are the one piece of furniture that almost every customer will interact with directly.

My thoughts:

I have often found myself loving a restaurant's food but hating the way it looked.  The food is the most important part but the way a business looks can greatly help or detract from a customer's experience.  Nowadays, businesses have to sell more than just a product.  A concept and idea has to be used as well and the interior design of a restaurant is a large part of doing so.
