If in doubt , throw it out .There are several things that people can do to prevent getting Listeria  such as:  washing raw produce, keeping raw meats separate from other foods and chopping boards, keeping surface areas clean, cooking meat thoroughly and keeping it at the right temperature as well as storing foods properly  .

Consumers also need to know that Listeria is resistant to cold temperatures, so refrigeration alone is not enough to kill this microorganism. If food has been left out for more than 2 hours or more don't eat it. 

 

It is also important to have work procedures in place to monitor temperature gages , used by dates and personal hygiene to avoid the ramifications that occur if the correct measures are not implemented.

Just remember the usual culprits:

Wash hands thoroughly after handling raw meat and soil covered vegetables

Cook meat to the correct temperature using a temperature probe to check

Store raw food below cooked food in a fridge

Make sure your fridges are cold enough using a temperature probe to check

Doesn't surprise me. Doner Kebabs are partly cooked and partly raw meat unless finished off on a griddle. How they have not all been closed down beggars belief...Dave

The numbers also don’t lie. Yearly, the CDC reports, 48 million Americans get sick; 128,000 are hospitalized and 3,000 die of foodborne illnesses.

Under new food safety law, bartenders have to wear gloves

Chefs aren't the only ones affected by a new food safety law that bans culinary workers from touching certain foods with their bare hands. Like chefs, bartenders have to wear gloves or use other utensils to make their drinks.

There are some key rules you should have your employee follow in order to run a clean, healthy restaurant. One of the major rules is washing your hands before and after handling all food products. Also, keeping a clean work uniform in order to look presentable.

A good way to keep your restaurant clean and staff and customers healthy is by requiring all staff to take a health exam. Making your employees take a health exam can help stop some major illnesses from spreading throughout the restaurant and to the food. The employees should also go to mandatory meetings about health and food safety
