Fall is a great time to plant kale. We have kale growing in our organic garden and I just planted some more seeds recently. In our living room, we have a lttle sticky poster that says, "Live long, eat Kale" and this message is so true,.

 

Kale is a nutritional powerhouse and a must for every kitchen. In addition to benefits that other great nutritional foods have like blueberries and green tea, there are more great reasons to eat kale.

 

Kale is rich in iron, artery-friendly Vitamins K, a nutrient that helps your body process body process blood sugar. Kale has more than twice as much vision protecting lutein and zeaxanthin as spinach. And it is high in calcium. Kale also is rich in Vitamin A, and C and minerals manganese and copper. It's high in fiber and low in calories.

 

Kale has a very high concentration of antioxidants and is particulary rich in cartenoids and flavanoids that work to protect the body from oxidative stress.

 

Another substance in kale  has been shown to help activate the detoxification enzymes within the liver known as sulforaphane. This compound is produced when you chew or chop the vegetable.

 

Kale provides:

1. Protection against cancer.

2. Improved digestion

3. Boosted immune function

4. Vision health

5. Anti-inflammatory benefits

6. Detoxification

7. Reduced cholesterol

 

Note that kale is one of the "dirty dozen" that Environmental Working Group (EWG) writes about in their Consumer Guides, so be sure to buy organic or pesticide free from a trusted local farmer or grow it yourself like we do at our home.

 

Raw or steamed,  kale is great. It goes well in green smoothies, salads, stir-frys or side dishes. And of course, kale chips, one of my favorites and so easy to make..
