This is an interesting and logical concept. Over the years I've found fasting to be a useful tool for different reasons. Clearing the mind and resting the GI system, to name a couple. It's difficult and best tried on the weekend or when no heavy work or high level thinking is needed. Fasting uncovers a lot as well, such as our obsession with eating which is natural and normal as we need food to survive. To test and rest that obsession is healthy. The idea of increasing immune function is an additional reason to add occasional fasting into a quiver of tools for healthy living.
