The Chile de Agua is a little known heirloom chile from Oaxaca, Mexico, grown in a small valley for at least three centuries and is slowly becoming better known and more popular in the US. It is one of the chile varieties grown in the ancient Milpa system of community gardening with companion planting using corn, beans, squash, amaranth, sunflowers and chile to feed and sustain the people in the community.

This is the most critical time for planning. We have a saying on our farm: “Fail to plan, plan to fail.” Lay everything out, month by month and crop by crop. Scale back on the crops you didn’t find a market for last season, and amp up those with strong demand. Figure out your rotations, the volumes of product, the workforce you’ll need to get it harvested. Have your restaurateur customers influenced the way you farm? Chefs have taught us that every single stage of a plant’s life offers something unique to the plate. For example, we sell carrots in micro, petite, baby, and full sizes. Right now, our clients are rediscovering edible flowers, like the blooms of allium, arugula, mustard, parsnips, and radishes.

Median total income for farm households increased each year from 2010 to 2014. The increase largely reflects greater income from off-farm sources, where the majority of farm households earn most, if not all, of their income. Given the broad USDA definition of a farm (see glossary), many small farms are not profitable even in the best farm income years. As a result, the median household income from farming shows a loss. However, the loss decreased over the past 5 years, with 2014 having the smallest negative value for income from farming at -$869.

In 2004 when Rolls took over as director, there were just 25 certified organic farms in the state; over the next decade, as she watched organic production explode across the country, her chart crept up ever so slowly to show 70 organic farms in the state by 2014, representing less than 4,000 acres total. By comparison, New York and Wisconsin, two states roughly the same size as Georgia, had approximately 900 and 1200 certified organic farms (representing more than 200,000 total acres in each state), respectively.

It is a model designed to generate profits… Instead of being dedicated to the production of food … it focuses increasingly on the production of raw materials such as agrofuels, animal feeds or commodity plantations… it has caused the enormous loss of agricultural holdings and the people who make their living from those holdings… it promotes a diet which is harmful to health and which contains insufficient fruit, vegetables and cereals.
