White truffle season has arrived and chefs’ urge to add the delicacy to their menu creations is undeniable. TravelsinTaste spoke with some of the country’s top chefs about this luxurious treat and how they are using it this season.  First up, Fabio Trabocchi, a native of the Le Marche region of Italy, one of the few habitats of the delicacy explained,  “When we put a truffle-specific dish on the menu, the best approach is to keep it simple, adding it to fresh pasta, risotto, and eggs. It’s one of my favorite ingredients. They are such rare delicacies and have such a sublime flavor.” Trabocchi has two restaurants in the Washington D.C. area, Fiola and Casa Luca.  In both chef Trabocchi will offer bianchetto (“little white”) truffles during the entire month of January at market cost to customers.
