This was very tasty. The sauce was wonderful. Everyone loved it.  I forgot the cornstarch, but that didn't seem to make a diference. Served it with sauted young bok choy. JD 10/14/12

Simple BBQ country-style Ribs

I love country style ribs (even though they're not really ribs).  In the past I'd. always grilled them, but this recipe boils they first then bakes under tin foil.  


They were VERY tender. I marinated for a couple of hours in Mojo Picante marinade then added ribs and marinade along with onions and garlic and water to big pot and brought to a boil. Then cooked on simmer for 45minutes.


Took ribs out and placed on pan, covered with a mustard barbeque saouce, covered with tin foil and baked at 325F for 35 minutes. JD
 


 


The title says it all, and it's true! These tender and tangy ribs are simply seasoned, simply boiled and simply baked in the barbeque sauce of your choice.

Portuguese-Style Fish Stew

This was very tasty and relatively easy. I used frozen cod fillets for the fish and it was fine. I marinated them in lime juice salt and pepper beforehand. Added  a little curry spice, fresh chopped jalapeno, and  several small red potatoes to the recipe. Microwaved the potatoes for 2 minutes ahead so they'd cook quickly. Also, added some Conecuh sausage pieces that I sauted seperately and tossed in the stew. You could prep everything ahead and just cook the veggies, etc, for 10 min, drop in the marinated fish for around 5 minutes, place in bowls and garnish with cilantro. A fresh ciabatta or other crusty bread is  a real plus with this. Cooked 9/15/12. JD

This was fairly easy to make and delicious. I modified slightly.  It took longer to cook, perhaps becasuse my filets were good sized. Probaby about 10 minutes, then added topping for 2 minutes. Served with new potatoes and garlic. Small side salad with tomatoes. -J

This crab dish was great. Tried it on 9/1/12. Used claw crab meat and 1/4 cup panko breadcrumbs instead of 1 slice bread. Baked it in crab-shaped ramekins (or whatever they're called). Sprinkled a little paprika on top for color. -J

We make these a couple of times a year. They are fun and social. Prep and refridgerate the ingredients nad just dip the rice paper in warm water to roll. I like the square rice wraps better than the roundones. They're easier to roll. JD

This was fun to make and tasted very interesting. I used a one pound on-sale ribeye instead of sirloin and suet (yuk!) or hamburger. The ribeye has plenty of fat to hold up to the boil without becoming tasteless.-J

Made this a couple of weeks ago. Used rice, but would like to try farro. A very pretty dish and tasted good. Wish the tomatoes were better this year. It could have been spactacular.

Served with spicy cocnut pork chops. -J

 

Tomatoes do double duty here, forming a sauce and decorating the top of the dish.
