I returned with a newfound interest and a deep curiosity towards the very precise, and creative barrel regimen techniques used by cellar masters in Cognac.

Half of French cooperages are located in the Cognac country. No coincidence to this.

One barrel has to be kept from its production day, for more than 50 years, only for aging cognac and nothing else. Unlike many other spirits, no reuse of barrels originally used for wines, fortified wines...  In the other hand, a number of second-hand cognac barrels are used for aging other spirits such as whisky or rum !....

One thing the French know how to do is celebrate their independence. In the world of cognac producers, to be an internationally known brand and still be independent after well over a century is something that deserves a party.

Cognac can still be a family business even though the four larger cognac trading houses are all owned by conglomerates. Camus, as the largest independent trading house of cognac, is the perfect example.
