Recent research suggests that the incidence of coeliac disease has at least quadrupled in the last 30 years.

 

The hybridisation and genetic engineering of wheat has resulted in a staggering 500 fold increase in the gluten content of modern day wheats compared to the wheat our forefathers would have known and this may be one of the prime reasons behind the massive rise in incidence of gluten intolerance and coeliac disease in recent decades.

Bread ranked first among the 10 foods responsible for 44 percent of sodium intake in the U.S. - From a health standpoint, “limiting sodium is only half the battle,” Bellatti told me in an email. “Getting the required amounts of certain minerals -- especially calcium, potassium, and magnesium -- is just as important. Of course, the more processed a food, the higher its sodium (and lower its potassium).”
