As an aging baby-boomer foodie, my major concern is the standard and quality of food served in nursing homes. The current emphasis is on food safety and hygiene. There is little interest in the preference of the consumer, who may choose food for taste rather than health. Living longer rather than better is not always the aim of the aging.
