PS Winery was founded in 2008 by Dwight Stanford, American and former surgeon and Raffaele Paoloni, Italian and ex-journalist. The two met at the University of Bra (sometimes referred to as the Slow Food University) in Piedmont where they both found out that they shared a common dream: Making “the best wines possible using sustainable and organic farming practices with minimal intervention in the winery.” The winery is sitting on one the scenic hills near the medieval town Offida. It has a size of just six hectares and the first harvest was in 2010 after the main building was constructed. Later that year a tasting room was built as well.
PS Winery produces eight red and two white wines – all in relatively small quantities. For example just 700 bottles of Merlot were produced in 2011.
2011 PS Winery - Merlot - Marche IGTThe 2011 PS Winery Merlot is made with 100% Merlot and after a 10-day fermentation in stainless steel tanks the wine aged for a year in barrique and tonneau. 16% was the label listed ABV. The wine is classified as Marche IGT.
In the glass, the wine had a deep ruby red color.
The nose was harmonic, quite spicy and very intense with aromas of nutmeg, cinnamon, cocoa and marasca cherries. [...]

Blend of Pecorino, Passerina and Trebbiano. All grapes are grown organically, without any systemic fungicides, pesticides or herbicides. Fermented in 100% stainless steel. The vineyard is trained as spur pruned cordon, in the towns of Offida and Acquaviva Picena, in Ascoli Piceno province at 250-300 metres above sea level.

Tasting notes: Brilliant, pale yellow with green hues, this wine has an enticing tropical-fruit driven nose. Notes of honeysuckle, lychee, peach pit, spearmint, fresh almonds and a touch of white pepper are evident on the nose. On the palate, the wine is medium bodied, with balanced alcohol and acid. The weight of the wine is plump, fresh and viscous, with a caressing mouthfeel. Creamy lychee, almonds and crushed rock fill the mouth and linger on a medium to long finish. Delicious, fun and fruity, enjoy now with grilled chicken or a l’aperitif with a variety hors d’oeuvres, including spicy shrimp, sashimi or prosciutto.

Confusion is usually the first thing that people experience when confronted with the Pecorino grape for the first time. "Isn't Pecorino the name of a cheese?" many ask, and, of course, they're right. Pecorino Romano is the name of a famous sheep's milk cheese made in the Latium and Sardinia regions of Italy, while the Pecorino we're concerned with here is a grape grown on the other side of the Italian peninsula in the Marche and Abruzzo regions. One might be inclined to wonder if the grape and the cheese had something in common given their identical names and the answer is, kind of. Both are derived from the same word, pecora, which means "sheep" in Italian. Pecorino Romano (and Pecorino Toscana and Pecorino Sardo) is so named because it is a sheep's milk cheese. The Pecorino grape is so named not because of any kind of direct link to sheep, but because it is said that sheep particularly enjoyed eating the grapes while they were being driven through vineyards from pasture to pasture.

2009 Poderi San Lazzaro Pistillo Pecorino. This white is made from an indigenous varietal found in parts of Central Italy known as pecorino. This grape is rustic and wonderful and creates wine that is aromatic with orange blossom and spice and the palate, while refreshing, is ample with white peach, lychee nut, and sweet sage. This is a remarkably good, full bodied white for $20 and is capable of pleasing a wide range of people and complimenting just about any holiday feast you’re planning to serve.

Poderi San Lazzaro is a small, relatively new winery in Offida, Marche.  They only grow 3 grapes: Montepulciano, Sangiovese, and Pecorino.  And from these 3 grapes they only make 4 wines.  It’s a family operation that has been making wine for centuries before they decided to produce wine commercially in 2003.  This wine, “Podere 72,” gets its name from the lot number where the grapes were originally taken.

Rosso Piceno and Rosso Conero are two Italian wine regions in Marche that few have heard of but most will like.  They are similar to Montepulciano d’Abruzzo, but normally with less heft and a more mineral backbone due to the calcareous soil.  “Podere 72” is a beautiful, mid-weight introduction to the aforementioned regions and could easily become one of your every week drinkers.  It is by far one of our most popular wines at the restaurant because of its extraordinary quality to price ratio. The Pecorino grape derived its name from the Italian word pecora, which means sheep. It is said that in the Offida region of the Marche sheep particularly enjoyed eating the grapes while they were being driven out of the vineyards from pasture to pasture. The yields are low but will ripen early and at high altitudes
In the glass this Pecorino from Il Crinale is quite full bodied with a deep, rich, aromatic and nutty character and moderate acidity giving it great balance. On the nose and palate there are flavors and aromas of yellow fruits, spices like ginger and white pepper, and nuts. It leaves a full, weighty, mineral-rich mouthfeel on the long finish. Pecorino wines are best paired with Asian cuisine, grilled fowls, rich salads, seafoods, risotto...
and cheese, of course!

The lace workers of Offida weave together the threads, with precise and quick movement of their fingers. They are the last witnesses of a precious art of ancient origin… so it is the origin of Pecorino, a noble Italic, austere, harsh and strong grape’s variety, which has been confined for decades onto the bare and steep slopes of the Piceno Apennines. A few wine growers have recently rediscovered this wine thanks to their love and enthusiasm. Pecorino is rare, precious and able to exhale a strong personality recalling ethereal and persistent sensations, year after year. Its personality and strength are harmonically enhanced by fermentation in “noble” wood, a perfect example of the past combined with a new oenological knowledge.

Straw yellow, crystal clear and consistent. The aroma has predominantly floral perfumes of acacia and hawthom:fruits of apple, peach and banana. To the taste it is warm, soft enogh and fresh. Full bodies, averagely persistent, with the end characterized by a floral return

In the restoration of the building it has been given particular importance to the complete recovery of the historical and architectonic charm of the caves and the well, where the local typical products have been placed to express the excellence and modernity connected with the rural and urban history of this magnificent town in the Picena area.
