Piero Selvaggio is famous for his wines — his cellar has been rated the best in America by Wine Spectator. Selvaggio brought Marco Scapagnini to introduce Domodimonti, a boutique winery from the tiny Italian region of Le Marche making its Texas debut.

Selvaggio is a legendary connoiseur of Italian wine, and said he was attracted to the brand in part because the story of the founder felt similar to his own. Both young Italian immigrants, Selvaggio found success at 26 in the restaurant industry, while the wine founder Dr. Francesco Bellini moved to Canada and developed the first anti-HIV compound drug ever sold.

Bellini returned to Le Marche after selling his pharmaceutical business and bought the winery, enlisting Carlo Ferrini, one of the world's top winemakers, to develop a wine that he could drink without an adverse reaction. The result is a half-dozen Domodimonti varietals, harvested using organic, sustainable methods and prepared using no acid adjustment, no added sugars, minimal sulfites and no other additives, what they call "natural" wines.

The result is said to be a wine that not only tastes great but won't give you a hangover. I particularly enjoyed the crisp sweetness of the passerino and the smooth, rich complexity of a Montepulciano/merlot blend humbly titled Il Messia — the messiah. I can only vouch for the no-hangover claim with my own limited experience, but after several glasses with dinner I woke up with a surprisingly clear head.

If this is the future of Italian food and wine, bring it on.

Pecorino is one of my favorite wine to enjoy with food, or just as an aperitif wine. The wine grows on you, at first it may seem to impose with its presence, one may think this is too big of a wine, but as you sip it, you discover the subtle flavors and beauty of this Pecorino by Domodimonti, truly of the best example of this varietal.

Elegant notes of lowers, hazelnut and mature fruits like bananas and peaches.

Pecorino is a dry and fragant wine with flavors of gooseberry, lychee and tangerine. LiCoste served between 10°/12° as an aperitif or with grilled fish drizzled with simple extra virgin olive oil.

Centanni wines, all organic certified, are produced by a family team in Le Marche region near the beautiful, historic village of Montefiore dell' Aso. The family produces a small range of wines typical of the Le Marche region as the white Passerina, Pecorino and a lovely red Rosso Piceno, which is only produced in the southern area of the Le Marche region.

The attack on the palate is tannic and delicate. The wine is well structured on strong tannins but without any roughness. The long and persistent finale reminds us of the chocolaty, almost licorice accents. Color is deep ruby red with bouquets of red berry jam, wood, leather and dark chocolate.

Discovering Domodimonti Natural  Wines from the Marche at Eataly NYC | Wines and People | Scoop.it

The winery was located at Montefiore dell’Aso in the Marche. It is  not a certified organic winery but a “natural” winery. What makes it “natural” is that the grapes are sustainable-grown using organic matter, low–yielding vineyards and the grapes are hand picked. No sugar is added to the wine. There is a strict selection of yeast and there are no additives made for color, acidity, mouth-feel, etc. The addition of sulfites is kept to a minimum and they use of state-of-the-art technology.

The new winery built in 2010 was designed to generate the least amount of visual and ecological impact on the land.
