Ingredients

4 large seedless oranges - preferably with a thick skin.
Sugar - the same weight as the oranges after they have been boiled.

Method

1. Wash the oranges and thinly slice off the top and tail
2. Put them in a pan with enough water to cover them and boil for one hour
3. Let them cool and then weigh them
4. Cut in half horizontally and then cut the halves in half vertically
5. Cut the quarters into thin slices - one cm approx
6. Empty the water from the pan and put the oranges in
7. Add the same weight of sugar
8. Bring to the boil and then simmer until it becomes syrup - not too thick. This should be about 30 minutes.
9. Put the hot sweet into hot sterilized jars and save

"All our aunties, John's [husband and director of Philhellene's] yiayia and our parents; they used to make glyko tou koutalou because that's the only sweet they had when they were young because that's all they could really afford as they couldn't afford chocolate and other sweets. Whatever they had in season, they wouldn't waste anything like lemon peel, orange peel, grapes, so the only product they really needed to buy was the sugar, then of course it would last all year and they used to hide it so the kids wouldn't get to it."

According to legend, Alexander the Great first came across the sugar cane from India and his generals bought it back with them but it was not cultivated for use at the time. It is said that Nearchus, one of Alexander's admirals, reached for the cane and tasted it and exclaimed, "India has canes that make sugar without bees".
Alexander's triumphant progress was halted on the banks of the Indus River by the refusal of his troops to go further east. They saw people in the Indian subcontinent growing sugar and making granulated "salt like powder", locally called "Sarkara" (ζάκχαρι). On their return the Macedonian soldiers carried the "honey bearing reeds" home with them. Sugar remained an unknown crop in Europe for over a millennium. Eventually it came as a cultivated product by Christopher Columbus. Venice at the height of its financial power was the chief sugar-distributing centre of Europe, sugar was a rare commodity, and traders of sugar became very wealthy.

Base

500 grams Nice biscuits or similar
250 grams unsalted butter

1. Melt butter
2. Put biscuits in blender and make into fine crumbs
3. Add the melted butter to crushed biscuits, blend well and line pan pressing tight
4. Put in refrigerator for at least an hour till hard

Filling

500 grams fresh cream
400 grams cream cheese full cream (Philadelphia or similar)
100 grams cream cheese light
200 grams of sifted icing sugar
3-4 caps of rosewater
3-4 tablespoons rose petal jam

Method

1. Beat cream till thick and set aside
2. Blend the two cheeses together till smooth with the rosewater
3. Add the sugar and mix well
4. Add the spoon sweet and mix well
5. Pour in cooled biscuit base
6. Put in cold part of the refrigerator and leave overnight or a whole day

Mediterranean anchovies have always been a local favorite, featured in ancient Greek writings more frequently than any other fish. In addition, anchovy sandwiches were popular French breakfasts in years past, and the French seaport of Collioure boasted a booming anchovy industry. Pollution in the late 20th century led to the unfortunate decline of the Mediterranean anchovy populations.
