Levi Leipheimer & Dr. Allen Lim: Back-to-Basics Nutrition Optimizes Performance

Elite cycling champion Levi Leipheimer interviews Dr. Allen Lim, director of sports science for Team RadioShack (TRS), about the optimal racing diet he oversees for the team's cyclists.

Dr. Lim espouses a simpler, back-to-basics approach to performance nutrition for the elite cyclists he works with. Breakfast usually features steel-cut oatmeal, along with eggs, white rice, and beet juice; this, says Lim, helps prepare the athletes for a day of racing, without filling them up too much. Lim is famous for his tasty rice cakes the TRS cyclists love to eat while training or racing, and he adds that that rice and eggs are two of the easiest things for cyclists to eat to power their exercise. Dinner for the cyclists typically includes a gluten-free pasta; a rice dish; a stew or meat-sauce dish; salad; and a fruit dessert.
