Ardrahan, a washed-rind from Ireland, a land not often mentioned when speaking of washed rinds and stinky cheeses in general. Made by the Burns family farm in Kanturk, Ireland, they started making this cheese in the early 80’s and initially exported most of it to France where there was an audience for more pungent cheeses.
