This story is more interesting than it sounds.  Professor Edelman is fighting for way more than $4 - he is fighting for the principle that intentionally posting lower-than-actual prices is a bait and switch that can hurt the consumer on a grand scale.

So much of the media seems to be focused on pizza and burgers, but the vision of the creators seems more focused on helping people eat healthier.  Interesting interplay between the real-life appeal of the product and the apparent, more benevolent intent of the inventor.  I'll be watching this product closely.

In a loose grove of aspens, on a high ridge not far from downtown Denver, Graham Steinruck walks at an impossibly slow pace. Every few feet, he stops and looks around. He notes the nickel-size leaves on the aspens. He pauses to feel the spongy texture of the soil under his feet. Everywhere, the forest speaks of renewal. Little green shoots of baby huckleberries poke out of the ground next to shrinking snowdrifts. Squirrels dart about, and meltwater turns into rivulets, winking in the brassy light.

The foraging "market" is so new that regulation seems a long way off.  The more I learn about it, the more I want to lace up my hiking boots and head into the woods.

I love this quote from Mr. Hajarnavis, "there is a small number of people who have celiac disease or are gluten intolerant, but there is a growing population of people who have somehow heard that gluten-free is healthier or think of it as fashionable, and when they remove gluten from their diet, they’re inadvertently taking out a lot of processed foods and are really feeling the benefits of eating healthier foods.”

I was lucky enough to spend a year in France, which had a huge effect on my relationship with food.  My favorite part of this list is the discussion of ingredients and preparation while enjoying a meal -- while it helps everyone involved to learn more about the food, it's also a helpful reminder not to take meals for granted, and to recognize the thought, planning, and love that goes into preparation.
