Did you know there are many veggies you can eat raw, even ones you would never think you could? True as this subscriber discovered when accidentally peeling red cabbage into very fine thin shreds. Not wanting to steam the shreds, she tried eating them and realized that she could indeed chew them without any problems. 

 

Cooking veggies does help break down cell walls, yet some veggies can be easily eaten raw while still preserving their nutrients. Cooking at lower temps as in steaming and dehydrating work best for nutrient preservation for those other veggies.

 

Health Tips:  If you're not consuming too many veggies and/or fruits, then obviously if cooking works better for you, then cook your veggies. However, if you're eating mostly plant based try eating some cruciferous veggies while in their raw state to get even more health benefits.

 

This subscriber recently made a kale/spinach/chard salad by mixing the dressing onto the tough kale leaves and other veggies and letting it marinate all day in the fridge. WOW was the response from the guests at our community potluck. The kale wasn't tough at all. In fact you would think it was steamed. Now if you're one of those people who can't eat kale due to other reasons, then use a different veggie like Brussels sprouts.

 

And with broccoli, you can substitute broccoli sprouts which have 10 times the health benefits of mature plants. In fact sprouting makes food more digestible because it helps the seed to release its enzymes. Enzymes aid your body to break down and digest the sprouts and other food you eat with the sprouts. Also sprouts add texture and flavor to your foods. Some are spicy, grassy, tangy, bitter, crunchy, and creamy. You can buy sprouted foods or you can make your own as it's fun to do.
