As China tries to build a domestic wine industry and grapples with the inevitable growing pains, one region is adopting measures in an attempt to guarantee quality. Ningxia, which has grabbed some attention as a promising spot for Cabernet Sauvignon-based blends, recently introduced a winery classification system. Modeled on the Bordeaux 1855 Classification, but with updated rules and a required renewal every two years, it ranks wineries in five levels. The organizers hope the system will recognize and encourage Ningxia wineries that consistently produce high-quality wine and assist consumers in making an informed selection.

Making Sense of Sulfites

Few tools in the winemaker’s bag of tricks spark more discussion, controversy and confusion than sulfites. Most enologists trust the embattled molecules to safeguard their carefully crafted wines from the ravages of oxidation, microbial contamination and premature aging. Many consumers, on the other hand, know little of sulfites’ benefits, assume they’re unsafe and prefer their wines to be sulfite-free–often based on little more than the stuff’s undeservedly bad reputation.

HIGHLIGHTS
 


 
Few winemakers today use a heavy hand with sulfites, but consumers still worry about health risks.
 

Exposure to sulfites aggravates existing asthma symptoms--though typically not headaches, which is a persistent myth.
 

The author, a science writer, reviews the worries that resulted in "Contains Sulfites" on wine labels and puts them in perspective.

Republican leaders are expected to pave the way for House consideration as early as next week of a bill to halt the restoration of the San Joaquin River and send water south to Central Valley farms. The GOP lawmakers introduced the Sacramento-San Joaquin Valley Emergency Water Delivery Act on Wednesday, just two days after their 11th-hour effort to insert a drought policy rider into the giant five-year farm bill was rejected by the House and Senate agriculture committees. Rep. Jared Huffman, a San Rafael Democrat who sits on the water subcommittee that normally would consider such legislation, called the maneuver "pure political theater" that would allow Republicans to blame Democrats for its failure, which he said "will play really well in the deep-red part of the San Joaquin Valley." The government has decided that rather than helping ensure adequate water to California's Central Valley, it is more important to protect fish," resulting in "the wasting of millions of acre-feet of water to the Pacific Ocean over the years.
