"Living on One Dollar is a full-length documentary made by four college students who traveled to rural Guatemala to live on just a dollar a day. Upon their return, they created Living On One, a nonprofit to raise awareness and inspire action around global issues like hunger and poverty -- and started by publishing the Change Series of video shorts. I found it so compelling I've dedicated this whole film fest to it. Each episode not only succinctly frames an issue faced by people in the developing world and makes it personal, but also offers resource links to learn more -- and even better -- to do something about it."

Did you know that mainstream health organizations, like Kaiser Permanente in California are waking up to the health benefits of consuming plant based real whole food?

 

In 2013 they recommended that their physicians recommend plant based to all their patients.

 

Today they’re going full in as some medical staff is adopting plant based consumption for themselves as well as recommending to their patients.

 

The doctors realize that they need to be doing what they’re telling their patients to do and everyone is seeing great health benefits.

 

Kaiser in CA is even sponsoring farmer’s markets and online educational materials. Kudos to this medical organization for understanding and learning more about nutrition which as you know affects every aspect of who you are.

 

Health Tips: How would you like to reverse your diabetes and heart disease? Start with Prevention in Action.

 

Later when you’re totally on board and feeling super great then you can go beyond prevention to complete plant based and more of a raw food lifestyle.

Health Tips:

Zucchini makes great plant based pasta known as zoodles. It can be used in baking for breads, muffins, cakes, cookies. Zucchini is a low sugar veggie and can be eaten raw or cooked.

 

Zucchini can be used in burgers, loafs, frittatas, soups, rollups, ravioli, and for you amaranth lovers it can be made into a yummy veggie patty.

Did you know that plant based food is extremely versatile as you can turn any vegetable into a plant based burger or loaf? Nuts and seeds become plant based cheeses, milk, and butters.

 

Grains become flour for breads, cookies, cakes, pies. Fruit becomes ice cream, sorbet, and butters and jams/jellies.. Zucchini, cucumber, carrot strips can be turned into plant based pasta using a spiralizer or simple peeler.

 

Sprouting or regular buckwheat can be used for granolas, desserts. Ground flaxseeds or chia seeds can be used as a binder in desserts or other dishes. Bananas and applesauce work as well for binders.

 

Coconut meat becomes coconut milk or coconut yogurt. Greens can become plant based wraps for sandwiches.

 

Health Tips:

Plant based foods are not only versatile in the kitchen but they are the food your body understands. When you feed your body with food other than plant food your body can’t utilize it to perform its functions. Why give your body something that can harm it?

 

Plant based food is rich in essential fiber, vitamins, and minerals, antioxidants, enzymes, plant protein, phytochemicals, and other nutrients which your body needs to do its work so you can thrive.

 

Fiber not only keeps everything moving in your digestive system, but it also acts as a prebiotic which is the food your gut bacteria thrive on.

 

A plant based lifestyle based on more raw foods with an abundance of greens and sprouts and which includes some ground flax or chia seeds, and walnuts for adequate omega 3s and little to no processed foods is very healthy.

 

Plant based foods are anti-inflammatory and have been shown in clinical trials and through anecdotal information to help reduce disease, obesity, regulate hormones, blood sugar, blood pressure, support your immune and digestive systems, help your brain to function optimally, and help you to feel full and satisfied for longer periods without eating excess junk foods.
