Technically, ricotta is not a cheese at all, but a cheese by-product. Its name, ricotta, means cooked again, an obvious reference to the production method used to make it.
Ricotta is made from the whey drained from cheeses. American ricotta is generally made with a combination of whey and whole, low-fat or skim cow’s milk.
Ricotta is a fresh, soft, snowy white cheese with a rich but mild, slightly sweet flavor. The texture is much like a grainy, thick sour cream. Ricotta is naturally low in fat, with a fat content ranging from 4 to 10 percent.

 

Fresh Homemade Ricotta

Ingredients - Makes about 2 cups

2 quarts whole milk1 cup heavy cream1/2 teaspoon salt3 tablespoons fresh lemon juice

Special equipment: large sieve, fine-mesh cheesecloth

 

Directions

 

Ricotta Pie

Ingredients - Crust

2 whole graham crackers, enough to make 1/3 cup crumbs1 tablespoon sugar1/4 cup almonds — whole, slivered, or blanchedpinch of salt

Filling

3 cups ricotta cheese, whole-milk or part-skim6 large eggs1/3 sugar1/4 cup Amaretto liqueur1 teaspoon vanilla extract, to taste1/8 teaspoon salt

Ingredients:

1 tsp. olive oil

Half of 1 (20 oz.) can pineapple chunks

2 large avocados, pitted

1 Roma tomato, diced

1/2 red onion, finely diced

1 jalapeno pepper, seeded and finely diced

1/4 cup chopped cilantro

2 Tbsp. fresh lime juice (from 1 lime)

Kosher salt and pepper

Serve with tortilla chips, or as a topping to your favorite Mexican meal. Don’t forget the margaritas!

Ingredients: ... -  ½ cup crab meat + 4 claws, cooked and shelled - 2 cups fresh arugula, very coarsely chopped - 2 mangos, cut in spears - 4 green onions, thinly sliced - 1 lime, juiced - 4 Tbsp. coconut oil - 12 mint leaves, chopped - Salt and freshly cracked black pepper to taste
Method: - In a small pan, heat the coconut oil to melt - Add the green onion and sauté until tender - Add lime juice, mint leaves, salt and pepper. Mix. - Make a bed of arugula - Place mango slices onto arugula and scatter crab - Drizzle with the warm dressing - Can be served individually or on a platter to shareSee More

Gnocchi are one of the easier types of ‘pasta’ to make at home and most definitely worth the effort. The mini-hockey pucks that are sold commercially as potato gnocchi are, to put it bluntly, hardly worth eating—especially after you’ve tried the real thing. The best homemade gnocchi are as light and airy as a down pillow and really do taste of potatoes. Once you’ve gotten the method down pat, they will take you no more than an hour to make (including the initial cooking of the potatoes) and you can make gnocchi in bulk and freeze them for future occasions. It is a skill well worth cultivating.

Ingredients

Makes enough gnocchi for 4-6 persons

500g (1 lb.) Russet or other mealy potatoes (see Notes)125g (1/4 lb) flour, more or less1 egg (optional)Salt

Laughing Bird shrimp are unlike many farmed shrimp, and that is a good thing. They are raised in the Caribbean, in inland ponds on the coast of Belize. They swim in filtered sea water, are fed a vegetarian diet, are not treated with additives or sulfites and are sold fresh and hand-peeled. The farm, the only one in Belize, has been given positive marks by the World Wildlife Fund. 

Aficionados of the small, sweet shrimp in restaurant kitchens include Larry Forgione at the Monkey Bar, whose tropical shrimp salad, below, sparkles with mango, cucumber, jicama, pineapple, ginger, mint, cilantro and a splash of rum.
Laughing Bird shrimp are $12.99 a pound at freshdirect.com, $13.95 a pound at Lobster Place at Chelsea Market and in Greenwich Village.

Central Farm is going to start an inland hatchery for tilapia.  It will take a few years, but they're looking at a million tilapia fingerlings once it really gets going.

 

"The Ministry of Natural Resources and Agriculture in collaboration with the Taiwan Technical Mission hosted a ground breaking ceremony for the building of a Tilapia Hatchery Center in Central Farm on Wednesday, July 17, 2013... The primary objective of this aquaculture project is to:
A.) produce 1 million “all male” high quality tilapia fingerlings to assist the development of the on-growing small-scale tilapia farming operations in Belize,

B.) promote the use of modern tilapia culture technology, increases the annual tilapia production, gradually decrease price in fingerling production

C.) the use of alternative feed to reduce commercial feed cost by 30-35% and to supplement the meat protein intake to families in rural areas through improved tilapia production in the region."
