When I went to work with Kim, the chef that helped me plan and prepare for my project, she suggested I do goat cheese-filled dates for dessert because they are extremely decadent but have no refined sugars in them, just the sugar from the dates, and is therefore better for you. I decided to research this idea further, and found out a lot about refined sugar vs. fruit sugar. I learned that white and fruit sugars are molecularly identical and are processed by your body in the same way. However, sugar that comes from fruit also contains lots of good things like fiber and vitamins, and usually contains a fraction of the sugars that cakes and sodas have.

After my meal was finished and eaten, my father and I discussed what we liked about the meal and what we wanted to and could reasonably do again. One of those things was that it was prepared in our beloved Crock-Pot. It is so easy to do, and creates delicious food every time. After deciding to attempt to use our slow-cooker more often, I went online and found this website, which is an extremely helpful tool in finding delicious slow-cooker recipes. I especially like that it came from the website www.cookinglight.com, because it means that all of these recipes are health-concious, which is incredibly important to us in any cooking we do.

These videos, (Parts 1 through 3) while posessing a fair amount of bias, do give a good explination of what the Paleo diet is, how to do it, and why it is the best option for your health. The elements of the Paleo diet are especially suitable for my father and myself because his diabetes and blood sugar issues require him to maintain a severely low-carb and nearly sugar-free diet. Eating Gluten-free, Dairy-free and processed sugar-free is also very good for my health because it prevents inflammation, which is something I struggle with a lot as a dancer, putting excessive amounts of pressure on my joints. Eating a Paleo-based diet also claims to be a good way to lose weight without obsessive calorie counting, which is something that my father and I both struggle with.

This video was extremely helpful to me, because the recipes I used called for julienned carrots and peppers, and diced onions, and I did not know how to julinne or dice. I especially liked this video because it got right to the point, and was super helpful in explaining the difference between dice, julienne, brunoise and batonnet. It also was very simple and easy to understand.

Nutrition Principles and Recommendations in Diabetes

This article was extremely helpful in creating my meal plan, because part of my project was creating a meal that was a good, healthy option for my father just as much as it was for myself. Since he struggles with borderline type 2 diabetes, creating a meal that was diabetic-friendly was incredibly important to me. The meal I created was consistent with the recommendations found in this article: It was low-carb, low-sugar, and high-fiber.

This is the blog of the author who's recipes I used for my meal. Her recipes are quick and easy, use only natural, fresh ingredients, and are mostly Gluten, Dairy and Sugar-free, which I have found to be extremely beneficial for those who have health needs such as diabetes (like my father) and for those who just want to be healthier and feel better. Seeing her health transformation and hearing how a Paleo diet has changed my expert mentor Kim Morrell's life convinced me that a Paleo-inspired meal would be the best for my project, because the Paleo diet seems to most closely cater to the health needs of my father and myself in the long-run.
