Gourmet Live ( I remember the old print Gourmet for its articles like this, sigh) has a future of food special to launch the year. They draw on the UK based Thrilling Wonder Stories conference late last year so there are some other 'scoops' on this page that relate to that. An online magazine about cooking and entertaining with Wisconsin Cheese.
Fred Harden's insight:

Grilled Cheese Month? How could I have missed it and it's almost over! More clever Wisconsin Cheese marketing. Don't mention heart attacks ( I did but I think I got away with it), everything in moderation even maple syrup.

Allison Hooper from The Vermont Creamery explains geotricum mould cheeses, and how they make them.

"A madeleine is to Marcel Proust as a good geo goat cheese is to me. Biting into that yummy cheese transports to la belle France and a youthful, innocent time in my life. "

Fred Harden's insight:

Followed this up from a tweet from Sonia Cousins, Australian cheese judge and local uber #cheesechick. Thanks Sonia. (That's Sonia in the photo with French Cheese affineur in our story about the judging of the 2012 Sydney Royal Cheese and Dairy Awards http://regionalfood.com.au/?p=3272

Sick of the McDonald's menu and wish there was more to chose from? You might want to consider becoming a McDonald's tourist." Huffington Post slideshow.

Fred Harden's insight:

Is this what we mean by eating regionally? Although some actually sound tempting, the Iberico in Spain and the Bubur Ayam - Malaysia (Chicken strips in rice porridge with spring onion, sliced ginger, fried shallots and diced chilies). Australia is represented by a Brekkie Roll, the McVersion of the tradies standard egg and bacon roll.

Mycelium Running: How Mushrooms Can Help Save the World (Book Review) | RegionalFood | Scoop.it

Mycelium Running: How Mushrooms Can Help Save the World (Book Review on Natural News)..."Mr. Stamets has a wonderful writing style; friendly, funny and scientific all at the same time. He describes fungi as the "grand recyclers" of nature, their cobweb like growth under logs as "mycomagicians".

The 2005 book looks to be focussed on the health and anti-viral nature but there's a lot of interest to growers. You can get the book at Ten Speed Press. Also available as an ebook.

47th National White Truffle Fair of Acqualagna in northern Le Marche

47th National White Truffle Fair of Acqualagna in northern Le Marche | RegionalFood | Scoop.it

The 47th National White Truffle Fair of Acqualagna in northern Le Marche, it will open October 28th and will be kept in these specific dates in November 1-2-3-4-10-11.
Acqualagna Its long tradition of research, production and sale of truffles makes its market the ideal meeting place for Italian and international buyers. Acqualagna must be considered the international Truffles Capital because of its numbers. Acqualagna, with about 600 tons of truffles of all kinds, collects two thirds of national production of the precious tuber.

Via Mariano Pallottini, LivingItaly NeilandCarol
Fred Harden's insight:

Store it away and start planning for next October. Alba gets the white truffle publicity, their event is around 12 October. There's time to visit both I reckon. Hat tip to Carol at Living Italy.

J Sainsbury plc / Sainsbury’s helps the nation Switch the Fish | RegionalFood | Scoop.it

When a customer asks for one of the Big Five species (cod, haddock, tuna, salmon and prawns) at the fish counter on ‘Switch the Fish Day’ they can try a lesser known alternative for free*.

Fred Harden's insight:

Yeah I know it's a supermarket, but I've always kept an eye on Sainsbury's from the time when Jaimie Oliver, who was their highly paid poster boy at the time, gave them a serve in his series Jamie's Fowl Dinners. And they responded and have continued to try and be sustainable. Giving them a lead position.

Todd Selby's new book 'Edible Selby'

Todd Selby's new book 'Edible Selby' | RegionalFood | Scoop.it

I picked this up in Readings yesterday and stood reading it for ages. It's good and I'll probably buy it just to have something to wave at people to prove that cookbooks don't need to be dull. The SF Chronicle says "Q&A Noted photographer, columnist Todd Selby profiles chefs, food in 'Edible Selby'... the second book by celebrated home design and fashion photographer Todd Selby, is the culinary equivalent of a seventh-grade girl's journal."

The design maybe suggests a seventh-grade journal but the content is for grown-ups. I liked it but didn't buy it 'cos I was feeling broke.

Ever since watching that sequence in Food Inc. I've felt uneasy about eating at McDonalds (even though they say they don't use the filler product in Australia). Well done Jamie and Eric Schlosser.

"McDonald's and two other fast-food chains have stopped using an ammonia-treated burger ingredient that meat industry critics deride as 'pink slime.' The product is still widely used as low-fat beef filling in burger meat, including in school meals.
