Bloom's taxonomy has been helpful to me whenever I struggle with how am I tapping into different knowledge levels while assessing student understanding.  The definitions of each of Bloom's sections are clearly defined here.

Here's a tool that could get to processing deeper student understanding.  So once your students can process a video, like most can do, ask them to include video within their video that explains principles and concepts, i.e. that is a great series of images about the plains, can you further explain your understanding of the concept by adding in a personal video description of the concept.
