The University of Georgia's Global Peanut Product Processing and Marketing Team (GP3MT), Dr. Anna Resurreccion, Dr. Manjeet Chinnan and Dr. Wojciech Florkowski, each led a project to design, develop, optimize, scaleup and commercialize Nutri-Nut in Uganda. . The scientists are engaged in research to support the value-chain for peanuts.
The research is supported by the US Agency for Intenational Development (USAID).
This project involved desk research on the causes of aflatoxin contamination, techniques that have been developed to control and/or manage the risk of contamination and a review of where these have been applied in groundnut production systems.

This article is not about peanuts but about resveratrol, a polyphenolic antioxidant compound found in peanuts.
Science has not shown whether more resveratrol than what one gets in wine is beneficial to humans. For now, it is prudent to eat/drink more food and beverages rich in these bioactives. The benefits of loading up with supplements contains these poly phenolic anti-oxidants has not been fully elucidated. Wine, peanuts, grapes are good food/beverage source.
My former graduate student, Dr. Lotis Francisco and I conducted conducted several studies that revealed the high concentration of health beneficial polyphenolic antioxidents iin peanut skins.

Peanut skins are a low-value residue material from peanut processing which contain naturally occurring phenolic compounds. The use of this material to improve antioxidant capacity and shelf-life of foods can add value to the material and improve the nutritional value of foods. The improved nutritional qualities and unchanged flavor profile occurring with low levels of peanuts skins in peanut paste and peanut butter suggest potential application of this technology in various food industries.
