Mozzarella in Carrozza

Ingredients

12 ounces fresh mozzarella8 slices soft white bread, crusts removed3 large eggs1/2 cup milkKosher salt and freshly ground black pepper1/2 cup all-purpose flourOlive oil

Directions

Slice the mozzarella and divide among 4 slices of bread. Top with the remaining 4 slices of bread.

Whisk the eggs with the milk in a shallow dish and sprinkle with salt and pepper.

Place the flour in another shallow dish. Dust the sandwiches in the flour and then dip into the egg mixture.

Heat about 3 tablespoons olive oil in a large skillet. Add the sandwiches to the pan and fry on both sides until golden and crisp, about 10 minutes.[...]

8 oz. cream cheese (softened)
Stick of butter (softened)
Package powdered sugar
1 tsp. Vanilla
Small chocolate or Chocolate Fudge pudding mix (with milk)
Oreos (I used 2 full sleeves)

This is a recipe from our friend Alessandra’s grandmother Maria. On Christmas day she will be up at 5am to start cooking for her 20 or so guests. The beauty of the crespelle, which is essentially a pancake, is that you can fill it with anything. Maria, ever the crowd pleaser, makes three different versions: one for the kids, one for the adults and one for cousin Giulia and her ‘infernal diet’. The only trouble with eating at nonna Maria’s is that if you finish your plate, it means you want more – and within an instant your plate is refilled. If you don’t finish your plate (or the second or third) you are admonished for not liking her food.

Crespelle dry ingredients

Ingredients for 8 crespelle (2 each)

Chocolate-Red Wine Cake

Ingredients

2 cups all-purpose flour3/4 cups unsweetened cocoa powder (not Dutch process)1 1/4 teaspoons baking soda1/2 teaspoon salt2 sticks unsalted butter or butter alternative, softened1 3/4 cups sugar or the equivalent of a sugar alternative2 large eggs1 teaspoon pure vanilla extract1 1/4 cups Italian dry red wineConfectioner’s sugar, for dusting

Directions

Preheat the oven to 350°. Butter and flour a 12-cup bundt pan.

In a bowl, whisk the flour, cocoa powder, baking soda and salt.

In the large bowl of an electric mixer, beat the butter with the sugar at medium-high speed until fluffy, 4 minutes. Add the eggs, one at a time, and beat until incorporated. Add the vanilla and beat for 2 minutes longer.

Working in two batches, alternately fold in the dry ingredients and the wine, just until incorporated.

Scrape the batter into the prepared pan and bake for 45 minutes or until a toothpick inserted in the center comes out clean.

Let the cake cool in the pan for 10 minutes, then turn it out onto a rack; let cool completely. Dust the cake with confectioner’s sugar and serve.

French butter cream

6 yolks

250g caster sugar

30ml water

450g butter

2 tsp clear butter flavour

1tsp almond extract
