1 small head cauliflower, cut into small florets (should yield 3 cups of cauliflower rice)
1 free-range organic egg, lightly beaten
½ cup / 1.7 oz / 50 gr shredded mozzarella cheese
½ teaspoon fine grain sea salt
¼ teaspoon ground black pepper

Sriracha Avocado Mayo

½ avocado, peeled and pitted
1 tablespoon Sriracha (make your own Sriracha with this recipe)
4 tablespoons mayo (make your own paleo mayo with this recipe)
Juice of ½ lime
¼ teaspoon fine grain sea salt
Ground black pepper to taste

Filling

½ lb / 226 gr thinly sliced mortadella
4 slices sharp cheddar cheese

SHRIMP CEVICHE
½ pound rock shrimp (raw, no tails)
1 teaspoon lime + ¼ cup lime juice
½ teaspoon seasoning salt (I used Santa Maria from Whole Foods Market)
½ tablespoon coconut oil
½ cup english cucumber cut into ¼ inch thick pieces and then cut into quarters
½ cup tomatoes (cut the same way as the cucumber)
¼ cup red onion, chopped
½ cup cilantro leaves, finely chopped
¼ teaspoon salt
MANGO SALSA
1 mango, peeled and cut into ¼ inch pieces
2 tablespoons cilantro leaves, finely chopped
2 tablespoons red onion, finely chopped
1 teaspoon jalapeno, very finely chopped (seeds removed for less spicy, keep seeds in if you like it spicy!)
GUACAMOLE
3 avocados + the shells (you will end up with 6 halves, save them if you are going to stuff the shells)
1 tablespoon + ½ teaspoon lime juice
¼ cup cilantro leaves, finely chopped
1 tablespoon jalapeno, finely chopped
½ teaspoon salt
Optional: If you are doing the stack method you will need two cans, remove both ends of the can with a can opener and dry it completely

Ingredients

Juice from 1 large POM Wonderful Pomegranates*, or 1 tablespoon POM Wonderful 100% Pomegranate Juice 
4 6-oz. salmon filets 
2 tablespoons olive oil 
2 tablespoons grainy Dijon mustard 
1 tablespoon cracked black pepper 
1 teaspoon chopped fresh parsley 
1 teaspoon chopped fresh dill 
1 teaspoon lemon zest 
1-2 lbs. red potatoes 
2 cloves garlic, crushed cup hot milk or cream 
2 tablespoons butter (optional) 
salt and pepper to taste


Garnish: 
cup arils from 1 large POM Wonderful Pomegranate or POM fresh pomegranate arils


Preparation

Preheat broiler. Prepare garnish Score 1 fresh pomegranate and place in a bowl of water. Break open the pomegranate under water to free the arils (seed sacs). The arils will sink to the bottom of the bowl and the membrane will float to the top. Sieve and put the arils in a separate bowl. Reserve cup of the arils from fruit and set aside. (Refrigerate or freeze remaining arils for another use.) Prepare fresh pomegranate juice.* Wash potatoes and cut into 2-inch cubes (it is not necessary to peel the potatoes). Boil potatoes in a large pot of water, about 30 minutes. >During the last 10 minutes that the potatoes are cooking, place salmon filets on a greased broiler pan. Brush each filet with olive oil and sprinkle with salt. Mix one tablespoon of pomegranate juice with mustard and cracked black pepper. Spread the pomegranate-mustard mixture on each filet. Mix together parsley, dill and lemon zest to make gremolada. Set aside. Broil filets 4 to 5 minutes per side or until flaky when tested with a sharp knife. Set filets aside; keep warm. Drain potatoes when soft enough to be pierced with a fork; add crushed garlic. Smash with a potato masher or a fork; potatoes should be lumpy. Stir hot milk or cream into potatoes until of desired consistency. Stir in butter, salt and pepper. Plate the potatoes and top with salmon. Divide gremolada mixture and spread on each filet. Sprinkle 2 tablespoons of arils on each filet. Serve this pomegranate recipe.

1 teaspoon sesame oil
1/2 teaspoon chili powder
1 1/3 cups raw cashews
1-2 teaspoons honey
1 lime, zested
Dressing
2 limes, juiced + the zest of 1 lime
2 tablespoons fish sauce (don't be afraid!)
2 tablespoons ponzu sauce (or soy sauce, but ponzu sauce is best and works better here)
2-3 tablespoons sweet thai chili sauce (I used 3 tablespoons)
1-2 cloves garlic, minced or grated (depending on you taste, I used 1)
1 tablespoon fresh ginger, grated
2-3 tablespoons tahini (sesame seed paste) (may sub peanut butter, but I loved the tahini)
Salad
4 cups baby kale or other dark leafy green
1 (16 ounce) bag frozen shelled edamame, defrosted and cooked for 3-5 min. in boiling water
3 carrots, shredded or chopped
2 bell peppers (red, yellow and or orange), sliced thin
1 cup fresh or frozen mango, chopped into chunks
2 lemongrass stalks, chopped
4 green onions, chopped
3/4 cups of fresh basil, cilantro and mint (I only used 1/3 cup mint)
4 hard boiled eggs, chopped (optional)
1/4 cup black and/or white sesame seeds, toasted
