Broccoli strascinati o ripassati in padella - Dry-Sautéed Broccoli

Broccoli strascinati o ripassati in padella - Dry-Sautéed Broccoli | MAREMMA MAGAZINE | Scoop.it

The ripassare technique, perhaps the most common in central and southern Italian vegetable cookery, in which parboiled vegetables are then sautéed in garlic-infused oil. The result is a rather soft and mellow vegetable that readily absorbs the taste of its cooking medium. Today we will take a look at a technique (strascinati, literally “dragged”) where you simply skip the initial parboiling and sauté the vegetable—typically, broccoli—resulting in a much firmer texture and ‘nuttier’ more intense flavor. This technique, typical of Rome, though perhaps not the prettiest way to make broccoli, it is one of the tastiest.

Ingredients (serves 4-6 as a contorno or side dish)

1 head of broccoli
2-3 cloves of garlic, peeled and slightly crushed
Olive oil
Salt and pepper
Water or white wine
Peperoncino, to taste

La Maremma Ridderkerk | Patricia Favetta's insight:

Gastvrijheidsondernemers starten consumentenactie: Nee tegen meer btw! 22-06-2015

Rome blijft altijd inspireren…

Italy must step up efforts to contain a bacterial disease blighting olive trees in the southern province of Lecce, EU officials warn.
La Maremma Ridderkerk | Patricia Favetta's insight:

Italy must step up efforts to contain a bacterial disease blighting olive trees in the southern province of Lecce, the European Commission has warned.

The Xylella fastidiosa bacteria also threatens citrus fruit and vineyards.

The Commission says at least 10% of the 11 million olive trees in Lecce are infected. It wants Italy to destroy infected trees and restrict any trade in species vulnerable to the disease.

New emergency measures are to be proposed by the Commission this week.

Thousands of hectares of olives are affected by the outbreak - a major worry for Italy, which is the EU's second biggest olive oil producer after Spain.

The Commission set out a range of measures to contain the outbreak last July, but says the situation has deteriorated since then and more action is needed.

The olive harvest in southern Italy has been hit by a disease new to Europe

The European Food Safety Authority (EFSA) says the disease, which kills trees by desiccation, is spread by various sap-sucking insects.

An EFSA spokesperson told the BBC that there remain "a lot of uncertainties" about the Italian outbreak, despite a comprehensive EFSA study of it published in January.

"Even trees not showing symptoms might carry the bacteria, which makes it really difficult. Just cutting down trees with symptoms might not be enough," he said.

Italian officials in Lecce say 15km-wide (nine-mile) buffer strips will be created around plantations which have infected trees. Those strips should be free of species vulnerable to the disease, so that the blight is contained.

Local officials, quoted by Italy's AGI news agency, suspect the disease entered Italy through ornamental plants imported from Costa Rica.

The Xylella blight has previously ravaged vineyards in California and citrus groves in Brazil, EFSA says.

A local campaign group called Peacelink disputes the EU data on the disease, however, arguing that a fungal infection is most likely to blame.

In a letter to EU Health and Food Safety Commissioner Vytenis Andriukaitis, Peacelink says more than 500 olive trees treated for fungi have recovered since spring last year.

It says research by the University of Foggia pointed to fungi, rather than Xylella, as the cause.

Peacelink urged the EU not to destroy olive trees en masse in the affected area, saying such a move would be "totally unnecessary".

Rome's Colosseum goes green for St Patrick's Day

Rome's Colosseum goes green for St Patrick's Day | MAREMMA MAGAZINE | Scoop.it
Rome's Colosseum was illuminated green overnight in celebration of St Patrick’s Day, the first time the monument has been part of the annual celebration.
La Maremma Ridderkerk | Patricia Favetta's insight:

One of the Eternal City’s most famous ancient sites was bathed in green ahead of celebrations on March 17th, Ireland’s national holiday which has become a global event.

Lighting up the Colosseum was part of a collaborative effort between the Irish embassy in Rome, city hall and the culture ministry (MiBACT).

Ahead of the illumination Charlie Flanagan, Ireland’s foreign minister, said he was “delighted” the Colosseum would take on an Irish tint.

Niall Gibbons, CEO of Tourism Ireland, said the decision to include “one of the most famous monuments in the world” marked “a major coup for Irish tourism.”

Dozens of major landmarks worldwide have been lit up this year to mark St Patrick’s Day, including Italy’s Leaning Tower of Pisa.

Not a topic one likes to talk about, but still: Forget Coffins – Organic Burial Pods Will Turn Your Loved Ones Into Trees

Not a topic one likes to talk about, but still: Forget Coffins – Organic Burial Pods Will Turn Your Loved Ones Into Trees | MAREMMA MAGAZINE | Scoop.it
The idea of coming full circle and returning whence we came is captured perfectly by this beautiful new burial method developed in Italy. The Capsula Mundi project by designers Anna Citelli and Raoul Bretzel has developed an organic, biodegradable burial capsule that will turn the deceased's body into nutrients for a tree that will grow out of their remains.
La Maremma Ridderkerk | Patricia Favetta's insight:

After being encapsulated in the fetal position, the deceased is buried and either a tree or tree seed is planted above their capsule. The project’s site already has a number of trees to choose from.

The project is currently only a concept because Italian law forbids such burials. If it were allowed to proceed, however, the project’s aim would be to create entire memorial parks full of trees instead of tombstones. And instead of destroying and burying wood for wooden coffins, we would, at the end of our lives, provide sustenance for new trees instead. And indeed, the idea that our loved ones and descendants could visit our tree, care for it and rest in its shade is truly a comforting one.

Plant-e, a company based out of the Netherlands, has found a way to harness electricity from living plants, using them to power Wi-Fi hotspots, cell phone chargers, and even streetlights. The company debuted their project, called “Starry Sky,” in November of 2014 near Amsterdam, where they lit up more than 300 LED streetlights at two different sites. Their plant power technology is also being used to power the company’s headquarters in Wageningen.

Do you know how to order coffee in Italy? The essential guide

Do you know how to order coffee in Italy? The essential guide | MAREMMA MAGAZINE | Scoop.it
Are you a little bit disoriented when entering in an Italian coffee bar for a coffee? No more worries, for Swide has made it clear for you. Here is the ultimate guide for ordering coffee (in the RIGHT way) in Italy. Please, take note!
La Maremma Ridderkerk | Patricia Favetta's insight:

“What’s easier than ordering a coffee?” You are probably wondering. Nothing, if you are not in Italy, for in coffee’s homeland, we take it very seriously and, in order to avoid embarrassment or misunderstandings, it’s time all the world knows the (essential) difference between a cup of Espresso and one of Americano (yes, they are TOTALLY DIFFERENT). Before going into the different types of coffee lets start with an essential piece of information: in Italy a cafe is actually called a “bar”, thus for us the term caffè does indicate the dark colored beverage you sip from your cup. That said, here is the essential guide to order coffee in Italy.

CAFFE’ = ESPRESSO

If you enter a Bar saying, “Un caffè, per favore” (Can I have a Coffee please?) you’ll get what is generally known as Espresso. Easy: in Italy “Caffe” (coffee”) is synonymous with Espresso. (You can also say “espresso” instead of “caffe” if you prefer and everyone will understand what you are asking for).

***

CAFFÈ RISTRETTO (RESTRICTED COFFEE)

Caffè ristretto is a shorter than a normal espresso in the same cup. The difference in this case is that having less water, the essence of coffee is more concentrated thus the flavor more intense.

***

CAFFÈ LUNGO (LONG COFFEE)

Similarly to Caffè ristretto, caffè lungo is a variation of the Espresso. It is made with more water but it’s different to an American coffee. It’s an espresso with twice as much water as is usually used for a single shot.

***

CAFFÈ AMERICANO (AMERICAN COFFEE)

Even American coffee ordered in Italy is different from how it is made and enjoyed in the rest of the world. Right, because in Italy, if you order a Caffè Americano you’ll get a cup of espresso with another cup of hot water to add.

***

CAFFÈ AL VETRO (COFFEE IN GLASS CUP)

Caffè al vetro has to do with the way in which the Espresso is served, that is in glass cup. Why? Well it’s essentially all a matter of taste: Caffè al vetro lovers swear the glass helps keep the suds on the surface so that the aroma of the coffee is more intense than in a ceramic cup.

***

CAFFÈ MACCHIATO (SPOTTED OR STAINED COFFEE)

Caffè macchiato is so called because it is an Espresso spotted with a splash of hot milk (caffè macchiato caldo) and served in a cup. While its alternative is made with cold milk and called caffè macchiato freddo and is served in two different cups, one containing coffee, the other one milk.

***

MAROCCHINO

A truly delicacy for all the greediest amongst you who want you enjoy a sweet break, Marocchino is a shot of espresso usually served in a glass with a sprinkling of cacao and hot milk foam on top. You’ll love it!

***

CAPPUCCINO

Cappuccino is made of a shot of espresso in a larger cup with steamed milk and foam. In Italy we drink it for breakfast so… please not order it after noon and don’t drink it while eating pizza or pasta if you don’t want to bemocked by all the Italians around.

***

LATTE MACCHIATO (STEAMED MILK)

Often known as Caffè Latte abroad, the Latte macchiato is milk literally stained with espresso and served in a glass.

***

CAFFÈ CORRETTO (CORRECTED COFFEÈ)

In this case coffee is served with a drop of liquor: cognac, grappa or Sambuca (or whatever other liquor you prefer). Italians drink it with grappa in order o digest a lavish lunch, and those who don’t have to drive and are not afraid of strong flavors drink it every moment of the day.

***

CAFFÈ SHAKERATO

Afschaffing 6% btw-tarief kost horeca 35.000 banen

Afschaffing 6% btw-tarief kost horeca 35.000 banen | MAREMMA MAGAZINE | Scoop.it

Heritage

Michelangelo was born on March 6, 1475, in Caprese, Italy. He became an apprentice to a painter before studying in the sculpture gardens of the Medici family.

Michelangelo, less interested in schooling than watching other painters, was introduced to painter Domenico Ghirlandaio and then his father realized that his son had no interest in the family financial business and, at the age of 13, he agreed on his apprentice to the fashionable Florentine painter's workshop.

His works include the "David" and "Pietà" statues and the ceiling paintings of Rome's Sistine Chapel, including the "Last Judgment." Although he always considered himself a Florentine, Michelangelo lived  his life in Rome, where he died in 1564, at age 88.

La Maremma Ridderkerk | Patricia Favetta's insight:

The Origin of Valentine’s Day comes from Italy during the roman times.  There are a few different stories about the origin of Valentine’s Day, but most historians agree is started in Rome.  St. Valentine of Rome was imprisoned in 496 AD for performing marriages for warriors against  the wishes of the Roman Emperor.  St. Valentine was sent to jail and fell in love with the jailer’s daughter Asterius.  According to legend, On February 14, 496 AD, St. Valentine wrote a farewell letter to Asterius because he knew he was to be persecuted that day.  When he signed the note, he signed it “Your Valentine” and many years later this day became known as Valentine’s Day.

If you really think about it, It makes sense that Valentine’s Day originated in Italy.  There are many negative stereo types about Italians, however they are also known to be romantic and passionate people.  They tend to cherish family and spread love to everyone they hold dear to them.  Italian is the language of love and it has been said that, Italian’s make the best lovers.  With all this information, it is no wonder that the most romantic holiday of the year comes from Italy.  When you go to purchase a card and gift for your Valentine this year, you will now have the pleasure of knowing that the Origin of Valentine’s Day comes from Italy.
