The proper dressing of a salad has got to be one of the most overlooked techniques in all of cookery. For many people, a salad is something so common that it hardly merits thinking about. But there is actually a kind of art to this everyday task that can really transform your salads from the pedestrian to—dare I say it?—the sublime. Perhaps nothing else demonstrates so well the importance of technique in the act of cooking.
The Golden Rule: The Italians also have their own particular way of dressing a salad, which can be nicely summed up by the following proverb:
A ben condire l’insalata, ci vuole un avaro per l’aceto, un giusto per il sale e uno strambo per l’olio.
Which, loosely translated, means: “to properly dress a salad, you need a miser to add the vinegar, a judge to add the salt and a spendthrift to add the oil.” In other words, there are only three ingredients for dressing the salad and the proportions are as indicated—very little vinegar, the ‘right’ amount of salt (not too much, not too little) and a generous amount of oil.
Located in Lucca Tuscany Benedetta Bianchini explains the importance of having a strong relationship with her clients and being able to provide a top class local service. "The request was to provide something special with a Spanish theme and for an estimated two hundred international guests in the month of July. The venue brief also stated that we should choose the Versilian coast for its beauty and distinctiveness. Even in the month of July preparations had to be prepared in the case of rain so a tent or a covered area should also be available in case the worst happened. "To find the ideal location proved to be a challenge and the process actually took us two months of careful consideration. The question arose was it to be a Tuscany Villa or should we try to find a beach type location". "The location had to look good both from a guest and photograph perspective, so we had to arrive and study the light and its effects on the areas we looked at. At the time of looking at the locations it was winter time so this was not an easy task and we had to stretch our imagination even further. On the second month of our search we narrowed our selections down to twelve places so at last we had a short list for the perfect place for a fabulous wedding!" says Benedetta". After much deliberation we found ourselves with two possibilities, we had found a very nice beach resort with cabins that had a vintage theme and also a beautiful luxury Villa that from its website looked ideal. We made our final choice along with the wedding couple that the beach resort would be the best location. A wonderful transformation had to imagined to hold our inspiration. The study and concept was born for our ideas! A piece of Spain could now appear in the region of Versilia and our choice was now going to be one of the Spanish Pitiusic Islands Ibiza or Formetera were the right contrast with minimal white that the structure offered. The setting had to include of course the tables on the terraces to see the sunset together with cactus plants, light effects, acoustic guitar music and talented musicians, Gypsies. The scene was set and from our imagination was born the "Summer evening Wedding Party" with 180 guests unleashed and Ibiza and Formetera seemed just around the corner! http://www.tuscanyfinerentals.com/tuscany-wedding/
